Why We Love This Healthy Easter Bunny Charcuterie Board
- Great for entertaining: This delicious grazing board would be perfect to serve for brunch or before Easter dinner! It’s made to feed a crowd, and there’s something for everyone – sweet, salty, creamy, crunchy, fruity, and more. All your work arranging this board will not go unnoticed, either. You’ll get so many compliments!
- So easy to make: One of the best things about this fun Easter charcuterie board is that it’s so simple to make! You don’t have to cook or bake anything except the deviled eggs; just slice, arrange, and form the rest of the ingredients on your charcuterie board. Plus, I’ve got lots of photos and easy-to-follow instructions to set you up for success!
- Adorable bunny design: Although you certainly do not have to carve or mold anything to make a great charcuterie board, it’s easier than you’d think, and the bunny is truly the pièce de résistance! It comes together with just two wheels of brie cut into different shapes and then arranged on the platter. The little mozzarella bunnies are a cute alternative to Easter candies and make this particular board extra special!
Ingredient Notes
- Fresh pearl mozzarella: These will be pressed into a bunny-shaped silicone mold for the most precious little detail.
- Brie wheels: You’ll need two wheels of slightly different sizes. Feel free to use other round, soft cheeses if you prefer.
- Prosciutto: Consider adding a variety of meats if you’d like.
- Crimson cranberry Stilton
- Apricot jam: You can easily replace this with another jam that fits your flavor profile.
- Hummus: Feel free to buy some at your local grocery store or make your own, like this sweet potato hummus or spicy garlic hummus recipe.
- Green grapes
- Strawberries
- Mini cucumber
- Snap pea pods
- Fresh carrots: Feel free to use any color.
- Round pita crackers
- Radishes
- Jordan almonds: I don’t normally add much sugar to my charcuterie boards, but these pastel candy-coated almonds are so perfect to incorporate into this Easter spread for an extra pop of color!
- Sage leaves: These add a little freshness and color.
- For the deviled eggs
- Hard-boiled eggs: Peel and halve the eggs lengthwise to remove the yolks.
- Avocado mayonnaise: This will add a tangy creaminess.
- Dijon mustard: For a little bite!
- Seasonings: Keep it simple with a mixture of paprika, salt & black pepper.
Step-by-Step Instructions
Step 1: Prepare the Mozzarella Bunnies
- For the bunnies: Fill the bunny mold with enough of the pearl mozzarellas to fit into the mold, mine took 2 per mold. Microwave on high for 10-15 seconds, check to see if the mozzarella is melted, if not microwave for another 5 seconds. You don’t want the cheese to brown, just melt. While still hot, use the back of a spoon to press the mozzarella into the crevices of the mold, blotting with paper towel if needed. Place in the fridge until set, about 5 minutes. Remove from molds and store in the refrigerator until ready to build the board.
Step 2: Make the Devilled Eggs
- To make the devilled eggs: Place the yolks into a medium bowl and smash them up with a fork. Add the remaining deviled egg ingredients and mix until smooth. Place this mixture into a piping bag with a star tip and pipe the filling back into the cavities in the egg whites, cover and set aside in the fridge until ready to build the board.
Step 3: Make the Brie Bunny
- To make the brie bunny: Slice both of the cheese wheels in half horizontally using a sharp knife. Place one of the halves cut side down on the bottom ⅓ of the tray. Using a round cutter (or trace a small bowl with a paring knife) cut out a slightly smaller circle from the center of one of the other brie halves. You should be left with about ½ inch of brie rind. Use this piece as the head, and place it so that it is cut side down above the body. Use the other brie wheel to cut ears and a small circle tail. The bunny ears will be placed above the head, and the tail will be placed directly onto the lower part of the bunny body.
Step 4: Assemble the Board
- To build the board: Start by placing the small bowls of hummus and jam, larger vegetables, devilled eggs (we used them as bunny feet), and grapes in piles around the board, remembering to color block them for visual interest. Next fill in the remaining spaces with the smaller items like piles of jordan almonds, crackers and the mozzarella bunnies. Use sage leaves to tuck in around the board and fill in any remaining spaces.

Recipe Tips:
- You can find small silicone bunny molds at local craft stores (we got ours at Michael’s) or online at amazon or baking supply stores. Make sure to blot any excess moisture from the mozzarella pearls before using them for the bunny molds. If you can’t find the pearl size you can use the ciliegine size mozzarella balls and cut them in half.
- For some extra spice, you can add a small amount of cayenne, hot sauce or horseradish to the devilled eggs.
- If you can’t find the crimson cranberry stilton, you could use any mild blue cheese or another fruit-filled cheese.
- You can use any vegetables, crackers, meats, or cheeses that you like on this Easter board. I went with more muted and pastel colors to bring across that Easter theme.
- You may not fit all of the ingredients on the board at the same time. Use leftover ingredients to refill the tray as necessary.
- The board I used was a 13” x 16” oval tray. You can use any medium to large board in any shape.
Recipe FAQs
There are so many great Easter charcuterie board ideas out there, but I like to start by adding some sort of centerpiece. For this Easter brunch charcuterie board, start by cutting two wheels of brie to look like a large Easter bunny!
Then, fill in the space around it with the flavors of the spring season, like tender Spring veggies, snap peas, fresh berries, other fresh fruit, and more. Play up the Easter theme by adding homemade deviled eggs, too, and a few sweet treats, like Jordan almonds, chocolate eggs, low-sugar jelly beans, or robin eggs.
My favorite tip is to mold or shape your cheese into the shape of the bunny! Since brie wheels are naturally round, they can easily be cut and trimmed to make a bunny shape without a lot of artistic skill. The white rind and large bunny ears make it obvious that this is a bunny, and it really stands out on the plate!
Then, you can arrange your favorite seasonal veggies and treats around the bunny to fill in the board. I even like to make mini bunnies out of mozzarella for an extra touch.
I always recommend assembling your charcuterie platter on the same day whenever possible. This will give you the best presentation without any veggies drying out, crushing your delicate details, or adding any condensation. However, that doesn’t mean you can’t work ahead!
The day before your event, fold the salami roses, rinse and dry your fruits, mold your little cheese bunnies, and make your deviled eggs. With those ready to go, you’ll have less work to do on the day of, and you’ll be able to assemble your Easter-themed appetizer board and go.
If you know you won’t have time to make your board the day of, try assembling everything except the deviled eggs on your tray, then wrapping it very well with plastic wrap.
Storage Guidelines
Store any leftover ingredients in the refrigerator for up to 4 days. The devilled eggs will keep for 3 days. Any food that was left out for over 4 hours should be thrown away for food safety.

Recipe Variations
- Make hard-boiled egg chicks: If you’re not a fan of hard-boiled eggs or want to add another pop of spring to your own easter charcuterie board, make these little egg chicks!
- Adjust the ingredients: Please feel free to adjust the ingredients on your Easter themed charcuterie board however you like! I recommend keeping the carrots, snap peas, and radishes for the pop of spring, but you can easily bring in different fruits, cheeses, crackers, meats, and more, depending on what’s available at your grocery store and your preferences.
- Make mini boards: Did you know they make mini brie wheels? These would make the cutest mini Easter charcuterie boards! To get two different sizes, you could use a Babybel for the bunny’s head. If you’re hosting a large party, you could make several of these to place on each dining table as a fun appetizer.
- Easter brunch board: If you’re hosting an Easter brunch, feel free to add some more breakfast treats, like waffles, yogurt, mini strawberry muffins, hard-boiled eggs, hot cross buns, and even more fresh fruit.
