These paleo waffles mimic the taste of Belgian waffles but are grain-free, dairy-free and refined sugar-free! Serve them up with fruit for the ultimate healthier breakfast or dessert! {gluten-free, paleo, & refined sugar free}
Generally, in our family, we like to keep breakfast pretty simple since mornings are so chaotic trying to get everyone out of the house on time.
It can be quite the crazy scene somedays.
Our go-to breakfasts generally consist of oatmeal with fruit and eggs, and a few days per week we’ll whip up a batch of these Banana Egg Pancakes or this Peanut Butter Banana Baked Oatmeal.
We usually reserve these recipes for special weekend breakfasts since those are two of our little guy’s favourite breakfast options!
This weekend, however, we decided to switch it up a bit and make waffles.
I’ve been wanting to experiment with a good waffle recipe FOREVER and this just felt like the perfect opportunity since for once in our lives, we weren’t running around like maniacs.
I didn’t want to make just any waffles though. I wanted to make waffles that met the following criteria.
- Free of refined flour
- Free of refined sugar
- A source of healthy fats, protein and fibre
- Slightly crispy on the outside, soft and fluffy on the inside
- Easy to prepare
- Family-approved
So as it turns out, the paleo waffles that we’ll be sharing today, just happen to meet all of those guidelines, among many more!
How to Make Paleo Waffles
First you’ll want to mix all of the dry ingredients together, making sure to break up any lumps.
Next, in a separate bowl, mix together the wet ingredients until well combined.
Add the wet ingredients to the dry ingredients and give the mixture a good stir.
Preheat the waffle maker to high heat and grease using preferred method (can use cooking spray, coconut oil, etc.)
Carefully pour the waffle mixture into the waffle maker and use a spoon or spatula to spread it around evenly so that all of the waffle compartments are covered in the mixture.
Close the lid and allow to cook for about 1-3 minutes. This time will differ depending on the type of waffle maker you have and the degree of crispiness you prefer.
We cooked ours for about one minute.
So fast, right?
I love watching them get all puffy and crispy on the griddle, so I tend to sneak a peek every 30 seconds or so.
Be sure to keep an eye on them so they turn out the exact level of crispiness that you’re going for.
How to prevent waffles from going soggy?
So a little secret to prevent these waffles from going soggy is to place them on a cooling wrack as soon as they’re done cooking to allow them to cool before serving.
If you simply put them on a plate which is generally our first instinct, the heat and moisture is trapped, causing them to become soggy.
Whereas if you air them out on the rack, the moisture dries up, thus preventing soggy waffles.

Tips for Serving these Paleo Waffles
One of my favourite things about waffles is that the options are endless for how you can serve them up.
Some of my favourite toppings include:
- Fresh or frozen fruit that has been thawed (try berries or peaches!)
- Drizzle of maple syrup
- Natural peanut butter or almond butter with banana slices
- Coconut whipped cream or regular whipped cream, if you’re feeling extra indulgent
- Or leave out the maple syrup and make them savoury waffles instead!
Can I freeze these waffles?
Definitely! In fact, that was one of the reasons why I wanted to make waffles so that I could store them in the freezer for later use, like those crazy busy mornings I was referring to previously.
To freeze, you’ll want to allow the waffles to completely cool.
Next, put them in a large ziplock bag or air-tight container and seal. Place in the freezer.
Grab them out of the freezer when the waffle craving hits and pop them into the toaster or microwave to heat through.
So much better than the Eggo waffles..with a ton of benefits too!

Paleo Waffles
Ingredients
Dry ingredients:
- 3/4 cup packed blanched almond flour
- 1/2 cup tapioca flour
- 1 tbsp coconut flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
Wet ingredients:
- 3 eggs
- 1/2 cup unsweetened almond milk
- 3 Tbsp. coconut oil melted room temperature
- 2 Tbsp. maple syrup
- 1 tsp. apple cider vinegar
- 1 tsp. vanilla extract
Instructions
- In a large bowl, miix all of the dry ingredients together and stir until there are no longer any lumps.
- In a separate bowl, whisk together the wet ingredients until smooth.
- Add the wet ingredients to the dry and mix until well combined.
- Preheat your waffle iron to high. Grease iron using desired method.
- Spoon batter into bottom of waffle iron and spread with spoon or spatula.
- Close the waffle iron. The cooking time will depend on your waffle iron and desired crispiness. As a general rule, most waffle makers will cook the waffle in 1-3 minutes.
- Carefully remove the waffles with a fork and place on a cooling rack. This will help to prevent the waffles from getting soggy.
- Continue with remaining batter.
- Serve with fruit, maple syrup or other desired toppings.
