These Sweet Potato Taco Bites are the perfect appetizer or meal for a crowd and are especially great for game day! They’re packed with so much flavour, no one will ever guess they’re healthy! {Paleo, gluten-free & whole 30}
Every Sunday during football season, my husband is always looking to whip up a special meal for game day. After all, football isn’t as fun without good food.
Usually he volunteers to makes dinner on Sunday, and after spending pretty much the whole week in the kitchen, usually I respond with, “Be. My. Guest.”
But this particular Sunday, I was looking for a way to use up some of my leftover guacamole that I had made the previous day, so I decided to take on the game day meal challenge.
We had some sweet potatoes to use up, extra taco seasoning in the pantry and some fresh ground beef from the meat shop, so I thought it might be fun to create some little sweet potato taco bites.
Very game-day-appropriate, I might add.
These little bites just seemed like something you would eat during a football game.
So I got to work creating these mini morsels of goodness.
Here are some of my tips for making these Sweet Potato Taco Bites:
- I would highly recommend making the taco seasoning and guacamole in advance so that all you have to do is cook the meat and sweet potatoes and assemble. You don’t want to be so busy in the kitchen that you miss out on all of the action! That’s no fun.
- If you’re really in a pinch, you can use store-bought taco seasoning, however, I always prefer to make my own since you can control the ingredients and sodium level.
- I recommend using large and thicker sweet potatoes since the larger slices will better be able to support the toppings. I used the larger slices from the middle of the sweet potatoes for these bites and set aside some of the smaller pieces from the end of the sweet potato to make other recipes like sweet potato soup or tater tots!
- Keep in mind that this recipe is designed to serve a larger crowd of about 12 or more people, so if you’d like to make less, simply divide the recipe in half.
At the end of the day, these sweet potato taco bites are not only cute and delicious, but also packed with vitamin A, C, potassium, protein, zinc, iron and healthy fats.
That is one nutrient-loaded bite!
Who ever said you can’t load up on nutrients while watching the game?

Sweet Potato Taco Bites
Ingredients
- 6 large sweet potatoes washed and cut into 1/2 inch slices
- 1/4 cup olive oil
- 1/2 tsp. salt and pepper
- 1 lb extra lean ground beef
- 4 tbsp. homemade taco seasoning can also use store-bought if in a pinch
- One batch of guacamole
Instructions
- Preheat oven to 375 degrees F. Wash the sweet potatoes and cut them into 1/2 inch slices.
- Place the slices in a large bowl and toss with olive oil, salt and pepper.
- Line a baking sheet with parchment paper, and place the sweet potato slices evenly in a single layer across the baking sheet.
- Bake in oven for 40-50 minutes or until soft when pierced with a fork.
- Meanwhile, while the potatoes are in the oven, cook the ground beef in a large frying pan over medium heat for about 7-8 minutes, stirring often, or until cooked through and no longer pink. Add taco seasoning and cook for an additional 2-3 minutes.
- Prepare the guacamole according to directions.
- Once the sweet potato slices are cooked, remove from oven and evenly divide the ground beef among them, placing about 1-2 tbsp. on top of each slice. Next, top with equal amounts of guacamole. Serve immediately.
