Ingredient Notes

- Fresh avocado: Make sure your avocados are ripe enough so that they’re easy to mash, but not to the point that they’re brown. If you give them a gentle squeeze in the palm of your hand, they should give a little but not be mushy.
- Fresh lime juice: Adds a great zingy flavor and the acid also helps to slow the browning of the avocado. You can also use fresh lemon juice, if you prefer.
- Red Onion: Red onion is milder in flavor than white or yellow, so can be eaten raw. It also adds a nice pop of color to the guac. Dice it finely so that it’s not too overpowering and is more evenly distributed throughout the mixture. You can use white onion in a pinch, if needed!
- Jalapeno: Incorporates just a hint of heat to this guacamole. You can use more or less depending on your preference for heat.
- Fresh cilantro: Adds a nice herby freshness. If you don’t like cilantro, you can swap it for parsley or leave it out altogether.
- Garlic: Mince the garlic cloves so that it doesn’t overpower the other ingredients. You can add more or less depending on your personal taste preferences.
- Kosher salt: I used 1/2 teaspoon of salt, but you can adjust this to suit your tastes.
How to Make Guacamole without Tomato – Step-by-Step

- Place the avocado and lime juice in a large bowl. Mash with a potato masher or fork until mostly smooth.
- Next, add in the red onion, jalapeno pepper, cilantro, garlic and salt.

- Mix until combined. Taste and adjust flavors accordingly.
Expert Tips
- Use avocados that are ripe but not brown for the freshest and most vibrant guacamole.
- For best results, allow the guacamole to sit for at least one hour before serving to allow the flavours to come together.
- Adjust flavors according to personal taste, adding more lime juice if you prefer more zesty flavor, more jalapeno peppers if you like more heat and more garlic if you prefer your guacamole to be more garlicky.
How to Store
Store in the fridge for no more than 2-3 days, as the avocado will start to brown. The lime juice will slow this process, but won’t stop it from happening altogether. Keep the guacamole in an airtight container or cover tightly with plastic wrap to keep it fresh for as long as possible.
You can even place some parchment paper right over top of the surface of the guacamole before covering to further help prevent browning.
Recipe FAQs
No, it’s so much more than that! Smashed avocado is great, and is the perfect choice for breakfasts and lunches served on toast, but guacamole is a stand out appetizer or side in its own right and contains so much delicious flavor and texture. It’s zingy, fresh, a little spicy, and so easy to make!
No, I wouldn’t recommend preparing it in a blender. It will lose all of its texture and will have more of a creamy consistency. If you’re looking for an avocado sauce to prepare in a blender, I would recommend my avocado creme instead.
You can really use any type of avocado, but it’s important to get them perfectly ripe. Most of us have access to Hass avocados, but there are lots of different types including some huge ones!
If the avocados aren’t perfectly ripe and tender, they won’t mash nicely and will end up having little chunks of avocado in every bite. Avoid hard avocados that feel firm when you touch them. If you do have unripe avocados, place them in a paper bag at room temperature for 1-2 days and let them ripen naturally.
In the same vein, you want to avoid mushy avocados as they’re likely overripe and won’t have quite the same texture or flavor, and probably won’t look that appealing.

Serving Suggestions
There are lots of different ways to serve fresh guacamole, and the options are nearly endless. This delicious guacamole can basically be served with anything! Try it with:
- Authentic Mexican Chicken Fajitas
- Authentic Chicken Quesadillas

- Tacos (try it with these Spicy Shrimp Tacos)
- Healthy Chicken Tortilla Soup

Recipe Variations
- Make spicy guacamole: Add extra jalapenos, a little chipotle pepper, red pepper flakes, cayenne pepper, or even some hot sauce to amplify the heat.
- Add beans: I know this sounds weird, but you can blend half a can of cannellini beans to add to the guacamole. You’ll get the extra fiber with a creamy, nutty flavor. It’s an easy way to serve extra protein to picky eaters!
- Let it rest: Guacamole tastes great right away, but the flavors really come together after a day or two. I often like it make it the night before I need it and just keep it in the fridge. You get to grab it out of the fridge and go, plus you get the very best flavor.
