I am in LOVE with these little mini cucumber cupcakes.
This recipe idea stemmed from the fact that there are loads of mini cucumbers available in the grocery store right now.
So naturally, since I’m always trying to come up with creative recipe ideas, I thought I would transform these mini cucumbers into light and refreshing little bites.
The BEST part about these little cupcakes is the fact that they’re topped with this delicious mixture of avocado and goat cheese (AKA the icing).
I not only love the taste, but they just look so pretty with that summery pastel green colour.
You know me, anything pretty…. I’m in!
I highly recommend that you pipe the pretty pastel “icing” onto the mini cucumbers.
People will think you have crazy fancy skills, but really all you’re doing is plunking the dip into a piping bag and squeezing it out.
Just don’t squeeze too hard or too fast or it won’t look that classy.
Also, make sure that there are no avocado chunks when piping.
When I first starting piping the mixture onto the cucumbers, I had some hunks of avocado that got stuck in the tip.
Suddenly a bunch of “icing” came oozing out….
It was messy.
And probably not the look you’re going for..
Don’t worry, it’s not as hard as it looks to make it look somewhat decent.
These are the perfect light appetizer to make for a party or get together, especially if your crowd is health conscious.

That’s what I call a light, refreshing and waist-friendly appetizer!
- 2 ounces fresh goat cheese
- 1 ripe avocado
- Dash of Tabasco sauce
- Dash of salt, optional
- 1 Tbsp. lemon juice
- 8 mini cucumbers, sliced
- 1-2 sundried tomatoes or roasted red peppers, chopped finely
- Parsley for garnish
- In a medium-size bowl, with a fork, mash together the avocado and the goat cheese until a smooth mixture is formed. Add a dash of tabasco sauce, lemon juice and salt if desired. Mix until well combined.
- Slice each mini cucumber into about 6 slices with approximately 1 ½ inch thickness.
- Spoon or pipe mixture onto cucumber slices and garnish with a small piece of sundried tomato or roasted red pepper and parsley.
