I’ve been making this recipe for several years now since it makes for the perfect light and healthy appetizer and they’re a definite crowd-pleaser!
Whenever I serve them up, they always get great reviews and no one can ever believe how simple they are to create!

Low carb and calorie appetizer: Because cucumber forms the base, these appetizers are both low in carbohydrates and calories. It’s always nice to have those healthier options!
Gluten-free option: It seems that at every party or gathering, there’s at least one person who requires a gluten-free option. These bites fit the bill!
Easy to prepare: The ingredients list is minimal for these cucumber bites and they literally only takes a few minutes to whip up.
Light and refreshing little bites: the combination of all the flavours compliment each other so well. Talk about refreshing!
Beautiful: They just look so darn pretty with that pastel green colour and the red and green colour contrast.
Super classy: these cucumber bites look like they took hours to prepare since they look really fancy, but really, they require very minimal effort. Make for the perfect party food, and no one will know your little secret!
Required Ingredients for these Cucumber Appetizers:
Like I said before, these bites only require a few simple ingredients. Because this recipe is so simple, it tends to be one of my go to recipes for a quick snack or appetizer.
You’ll need the following ingredients:
- English cucumbers
- Ripe avocado
- Goat cheese
- Tabasco sauce
- Lemon Juice
- Salt
- Sun-dried tomato or roasted red pepper
- Fresh parsley
How to Make this Easy Cucumber Appetizer Recipe
In a medium-size bowl, mash the avocado with a fork.
Add the goat cheese and mix together until a smooth mixture is formed. Add a dash of tabasco sauce, lemon juice and pinch salt.
Mix until well combined. Taste a bit and adjust the amount of tabasco sauce and salt depending on your preferences.
Slice the cucumbers into about 15 slices that are approximately 1 ½ inches in thickness.
Spoon or pipe mixture onto cucumber slices and garnish with a small piece of sun-dried tomato or roasted red pepper and sprig of parsley.
How to get these cucumber appetizer bites looking EXTRA classy
I highly recommend that you pipe the pretty pastel “icing” onto the cucumber slices.
It always turns out SO classy and it doesn’t require much skill, even if you have zero experience using a piping bag.
You literally just plunk the avocado goat cheese mixture into an icing bag with a tip attached and gently squeeze some of the mixture onto each cucumber slice.
Just make sure there are no large avocado chunks in the mixture or it might get stuck in the tip and come oozing out all at once.
My favourite icing tip to use for piping is the Wilton 1M star piping tip. It’s so versatile. It works perfectly for appetizers such as this one, although I like to use it for piping icing on cupcakes too!
How to Store these Appetizers
I recommend storing these cucumber bites in an air-tight container in the fridge for up three days.
The lemon juice in the topping helps to prevent the avocado from going brown so they still look fresh the next day.
Although they generally look and taste best fresh and made the day of, you can prepare them up to a day in advance.
Definitely an appetizer that you’ll want to try out for your next gathering!

Avocado Goat Cheese Cucumber Appetizers
Ingredients

- Dash of tabasco sauce
- 1 tbsp lemon juice

I made these for a Super Bowl party using cream cheese as I didn’t have goat cheese. Followed the recipe otherwise. Love that it’s only a few ingredients. They were really good and like that it’s a healthy appetizer. Very fancy looking too. My husband wants me to make them again.
