I am in love with this little avocado goat cheese cucumber appetizer. It’s one of my favorite recipes, especially when you need a low-prep, simple recipe that looks great without requiring a ton of effort.
I’ve been making this cucumber avocado appetizer recipe for several years now since it makes for the perfect light and healthy appetizer, and they’re a definite crowd-pleaser!
They always get great reviews, and no one can ever believe how simple they are to create!

Ingredient Notes
- English cucumber: These are nice and long, so you can get quite a few bites out of each one. There’s no need to peel them!
- Ripe avocado: Make sure it’s perfectly ripe (but not brown) for a smooth, creamy texture.
- Fresh goat cheese: This adds a tangy, slightly funky flavor that tastes amazing in this recipe!
- Tabasco sauce: For a little acid and heat.
- Lemon Juice: To brighten up the filling.
- Sun-dried tomato or roasted red pepper: Add a little on top as a garnish.
- Fresh parsley: This makes them look extra fancy! Feel free to use other fresh herbs, like a little cilantro or dill, if you prefer.
How to Make this Easy Cucumber Appetizer Recipe
- In a medium-size bowl, mash the avocado with a fork.
- Add the goat cheese and mix together until a smooth mixture is formed. Add a dash of tabasco sauce, lemon juice and pinch salt.
- Mix until well combined. Taste a bit and adjust the amount of tabasco sauce and salt depending on your preferences.
- Slice the cucumbers into about 15 thick slices, approximately 1 ½ inches in thickness.
- Spoon or pipe mixture onto the slices of cucumber.
- Garnish with a small piece of sun-dried tomato or roasted red pepper and sprig of parsley. Place on a serving plate and enjoy!

How to Get These Cucumber Bites Looking EXTRA Classy
I highly recommend that you pipe the pretty pastel “icing” onto the cucumber slices.
It always turns out SO classy, and it doesn’t require much skill, even if you have zero experience using a piping bag.
You literally just plunk the avocado goat cheese mixture into an icing bag with a tip attached and gently squeeze some of the mixture onto each cucumber slice.
Recipe Notes:
- If you’re using a piping bag, make sure there are no large avocado chunks in the mixture, or it might get stuck in the tip and come oozing out all at once.
- My favorite icing tip to use for piping is the Wilton 1M star piping tip. It’s so versatile. It works perfectly for appetizers such as this one, although I like to use it for piping icing on cupcakes too!
- Before piping, gently dry each slice of cucumber with a paper towel. This will help the topping stay in place really well.
- For an even fluffier texture, feel free to blend the goat cheese and avocado in a small bowl with a hand mixer.

Yes! Although English cucumbers have the perfect shape, texture, and mild flavor, you can easily use any type of cucumber. Just be sure to cut them into thin rounds that are easy to eat. You can also adjust the thickness of the slices of cucumber to your preference!
If you don’t have a piping bag and still want a luxurious look, you have a couple of options. First, you can use a cookie scoop to add a perfectly round dollop of the goat cheese filling on top of the cucumber. This looks pretty nice, but it can be tricky to get a smooth shape.
An even better option is to use a plastic zip-top bag! Fill it just like you would a regular piping or pastry bag, then use scissors to trim off a small corner. Make a small cut at first; you can always make it larger if needed. Add a round swirl of the avocado goat cheese mixture on top and garnish like normal!
I usually like to make the cucumber slices pretty thick – approximately 1.5 inches in height. This gives you a nice bite, and the cucumber slice is sturdy enough to hold up the filling even after the first bite. Feel free to cut the cucumbers a little shorter if you’d prefer.
Storage Guidelines
I recommend storing this cucumber goat cheese appetizer in an airtight container in the fridge for up to three days. The lemon juice in the topping helps to prevent the avocado from going brown, so they still look fresh the next day. Although they generally look and taste best fresh and made the day of, you can prepare them up to a day in advance.
I don’t recommend using plastic wrap as it will crush the topping. A solid-sided airtight container is perfect!
