Kodiak Waffles, But Better!
By now, I’m sure you’ve seen the black boxes of Kodiak whole-grain pancake mix at your local grocery store. We always have at least one box in the pantry for quick and easy recipes, like these waffles or my favorite Kodiak Cake Blueberry Muffins and Pancake Bowls.
Since the mix contains whole grain wheat flour, oat flour, and whey protein powder, they’re also packed with a whopping 15 g protein and 5 g fiber in just one 1/2 cup serving!
But, my family isn’t a huge fan of the waffle recipe on the box. These homemade Kodiak banana waffles are soft and tender with just enough sweetness from the banana and a hint of chocolate from chocolate chips. We can (and do) eat these for breakfast all the time!

Ingredient Notes

- Kodiak mix: I used the Kodiak Cakes Power Cakes Flapjack and Waffle Mix to make this recipe.
- Chia seeds: Chia seeds are a nutrient-dense add-in that provides additional fiber, protein, omega-3s, antioxidants and minerals. They also help to thicken up the batter slightly for thicker waffles.
- Baking powder: To make the waffles rise and get extra fluffy.
- Seasonings: Salt and vanilla extract add extra flavor.
- Milk: You can use dairy or plant-based milk such as unsweetened almond milk, oat or soy milk for this recipe.
- Greek yogurt: The yogurt adds extra moisture and additional protein as well. I typically use 0% fat plain Greek yogurt. You can also sub in cottage cheese if desired (sounds weird, but it really works)!
- Eggs: To bind the ingredients together and incorporate extra protein.
- Banana: Use an overripe banana for the best results. It will be easier to combine with the other ingredients and is naturally sweeter.
- Coconut oil: This adds extra moisture and helps the waffles to get crispy on the outside while cooking.
- Chocolate chips: These are optional, but make a delicious add-in. Use mini or regular sized chocolate chips if you choose to add them in.
Step-By-Step Instructions




- Preheat waffle iron and spray with cooking spray.
- Place all ingredients (except the optional chocolate chips) into a high speed blender and mix on high until completely smooth.
- Allow the batter to sit for 5 minutes. If the batter is too thick after 5 minutes, add a little more milk. Stir in chocolate chips, if using.
- Pour about 1 cup of batter onto the waffle iron (the amount will depend on the size of your waffle iron). Cook waffle until golden brown. I cook mine at setting #2 for about 5-6 minutes, however you can adjust cooking time depending on how crispy you like your waffles.
- Repeat until all of the waffle batter is used up.
- Top with desired toppings.
Serving Tip: I like to serve these waffles with additional banana slices, a drizzle of peanut butter, chopped walnuts, a sprinkle of chocolate chips and a bit of maple syrup. So delicious!

- Scrape down sides: Once you’ve started blending the mixture, be sure to use a spatula to scrape down the sides and lift any of the kodiak cakes mixture that might be sticking to the bottom of blender. This will help ensure that all of the ingredients are evenly distributed and that there are no clumps of flour throughout the mixture.
- Adjust batter consistency according to personal preference: If you prefer thicker waffles, add a bit of extra kodiak cakes mix. If you want a thinner batter, add a bit of extra milk until desired consistency is reached.
- Cooking waffles: I typically cook my waffles on heat setting #2 for 5-6 minutes until they’re golden and lightly crispy on the edges. If you prefer crispier waffles, you can turn the heat up a bit or cook them for a bit longer.
- Waffle quantity may vary: The number of waffles the recipe makes will depend on the size of your waffle maker. I use the Cuisine Art Belgian Waffle Maker and get 2 1/2 large waffles or 10 smaller 4-inch waffles from the batter.

Storage and Reheating Guidelines
Refrigerator: The cooked waffles will keep well in the fridge for up to 3 days. Let them cool before storing in an airtight container.
Freezer: You can freeze leftover waffles for up to 3 months. Store them in a freezer safe bag or container with the layers separated with parchment or wax paper to prevent them from sticking together.
How to Reheat: Whether the waffles are being reheated from the refrigerator or a frozen state, you can pretty much reheat them the same way. Pop them in a toaster or toaster oven until warmed through and slightly crispy.
You can also reheat them in the microwave for a minute or so, but they won’t be as crispy.

The Kodiak cake mix is made with whole grain whole wheat flour and oat flour so it’s a healthy alternative to your typical waffles. It also contains more protein (with 15 gram of protein for 1/2 cup of the dry mix), fiber and less added sugar and calories than a lot of other waffle and pancake mixes, making it a lighter, more nutrient-dense option. I like to incorporate additional ingredients like banana and chia seeds for an even more power-packed breakfast.
One small 4-inch waffle contains 8g of protein. If you have two small waffles as a serving, that’s 16 grams of protein. Tough to beat these high protein waffles!
No, the Kodiak waffle mix is made with whole grain flour which contains gluten. Some of the kodiak cakes mixes are gluten-free, so be sure to check the label if you’re looking for a gluten-free option.

These Kodiak protein waffles are hearty enough to serve by themselves, but like most waffles, taste even better with all your favorite toppings!

Recipe Variations
- Change the add-ins: Swap the chocolate chips for blueberries…or add both!
- For even more protein: Use liquid egg whites instead of the eggs. You can also try adding a bit of protein powder as well.
- If you don’t like banana: If you’re not a fan of bananas, try subbing in about 1/3 cup applesauce, pureed pumpkin or sweet potato.
- Make pancakes instead: You can also use this recipe as a protein pancake mix to make pancakes instead of waffles. Just cook them on a griddle like normal. So good!

Kinda sorta tripled the recipe, kodiak cakes are pretty forgiving. Used 2 egg whites and one whole egg, 1/2 cup of fairlife 2%, 3/4 cup of fat free Greek yogurt, 3/4 cup 2% cottage cheese, 1 1/2 tsp vanilla extract, 3 tsp cake batter, 1/2 tsp agave syrup, 1/2 tsp molasses, 1 tsp liquid Stevia, 1 tsp baking powder, 1/2 tsp salt, 4 cups kodiak cakes, skipped the chia seeds, skipped the banana, skipped the chocolate chips, skipped the oil (oil sprayed on iron), added water until it was the right consistency, I blended the wet ingredients, mixed the dry in by hand.
Honestly writing this out is more for my records than anything. I’m not a huge fan of maple syrup so the agave/molasses/stevia was that substitute. I’ve found cake batter extract makes waffles very rich, so the extra vanilla I was supposed to triple I replaced with that. Egg whites instead of whole eggs for extra protein, although I forgot to triple it, with the current price of eggs I’m okay with that. Taking away a little of the yogurt and adding cottage cheese for a little more savory and full profile, the cottage cheese also took some of the milk’s place. They were very good! I’ll probably try to make them a little truer to this recipe next time.
