No Bake Snowmen Truffles
We absolutely love these creamy, indulgent snowman truffles. These coconut truffles are one of my favorite desserts during the holiday season!
The combination of the coconut and white chocolate is so delicious, and of course, the cute snowmen decorations take them over the top.
As a no bake treat, this simple truffle recipe is easy to make, and they store really well, so you can pull them right out of the fridge or freezer and know they’re all ready to go whenever you need them!
Why We Love This Easy Christmas Truffles Recipe
- Easy festive treat: Although truffles do require a bit of effort rolling and shaping, they’re not very hard to make, and they’re so much fun to decorate! The extra details really make them stand out, and you’ll find your guests oohing and aahing over them. The kids will adore them, too!
- Great make-ahead treat: Believe it or not, you can assemble these truffles up to one month before you need them! To keep them firm, I like to store them in the freezer, which keeps them perfectly fresh for weeks at a time. The night before you need them, place them in the fridge to soften up, then serve. Easy!
- Simple ingredients: You only need three simple ingredients to make the snowman body and a few extras for decorations. Unlike many of the snowman truffle recipes out there, there’s no Oreo cookies or icing required!
Ingredient Notes
For coconut truffles:
- White chocolate: You can either use a white chocolate bar or chips from the baking aisle. Although you can use almond bark, candy coating, or white candy melts from the grocery store, they don’t usually contain any cocoa butter and are packed with palm kernel oil and palm oil.
- Coconut cream: This is the canned stuff that’s incredibly thick and fluffy. We typically find ours in the Asian section in the grocery store.
- Shredded coconut: Stick with unsweetened coconut shreds to keep the sugar low. You’ll need extra for coating as well.
For coating:
- Shredded coconut
For decorations:
- Mini chocolate chips: When inverted, these make the perfect small dots for the eyes.
- Dried apricot: Instead of the snowman’s carrot nose, we’ll use little triangles of dried apricots.
- Edible pearls: These little pearls are a great addition and work perfectly for the snowman’s mouth.
- Thin pretzel sticks: Add these to the sides for the arms. You can use gluten-free pretzels if required.
How to Make Snowman Truffles – Step-by-Step Instructions
Step 1: Prepare the Coconut Truffles
- Place 2 cups of chopped white chocolate and coconut cream in a medium heat-proof bowl. Carefully microwave in 20-second intervals, stirring in between each interval, until melted and smooth. Alternatively, you can melt it using a double boiler on the stove, stirring occasionally. Stir in ¾ cup shredded coconut until distributed. Cover the bowl and chill in the refrigerator for 4-6 hours or until firm.
- Once firm, place 1/2 cup shredded coconut in a small bowl. Take the chocolate mixture out of the fridge. Use a small ice cream scoop, melon baller, or spoon to scoop out small sections and form them into balls with your hands. Roll each ball in coconut and place on a baking sheet lined with parchment paper. Freeze for 20 minutes.
Step 2: Decorate the Snowman Faces
- Remove 10 of the balls from the freezer (these will be the snowman heads), and leave the rest in the freezer (these will be the snowman bodies).
- For each of the snowman heads, poke in two mini chocolate chips for eyes, 1 small dried apricot sliver for nose, and 3 edible pearls for the mouth. I like to use a wooden skewer to assist with this part.
Step 3: Assemble the Snowmen
- Next, melt the remaining 1 tablespoon of white chocolate in 20 second intervals in a bowl in the microwave until smooth.
- Remove the remaining truffles from the freezer. Dab a small amount of melted white chocolate on the top of each of the balls. This will act as glue to stick the snowman head to the body. Stick the decorated snowman heads to the dab of white chocolate and press down gently to help it adhere.
- Carefully poke two pretzel sticks into each side of the bottom ball for the snowman’s arms.
- Store snowman truffles in the fridge in an airtight container for up to a week or freeze for up to a month. Serve chilled.

Recipe Tips:
- The truffle mixture will be a bit soft and sticky when rolling it into balls, but will become easier to handle once you coat the truffles in the shredded coconut. They’ll also firm up once you store them in the fridge.
- If the truffle mixture becomes too soft, you can place it back in the fridge or freezer for a few minutes to make it less sticky and easier to form into balls.
- To make it easier to decorate the snowman’s face, I like to use a bamboo skewer or toothpick to poke small holes into the truffle where I plan to place the eyes, nose and mouth. Then, just poke the chocolate chip eyes, dried apricot nose and edible pearls where the holes are so that you don’t have to press too hard on the snowman’s face.
- If the snowman’s head flattens when you add the facial decorations, just carefully remold it into a ball with your hands before sticking it onto the body.
- These truffles will firm up when stored in the fridge, so you may wish to leave them at room temperature for a few minutes before serving to allow them to soften up a bit.
- These snowmen truffles are a bit more indulgent, so they should be consumed in moderation as a special treat. To lighten them up, you can just decorate the snowman heads without the second ball attached for the body or make the balls smaller. They would work either way!

The answer depends on what you consider “healthy.” White chocolate is made with cocoa butter, milk, sugar, and usually a few other emulsifiers and stabilizers. Because it’s made with cocoa butter, it has much fewer cocoa solids than milk or dark chocolate, but the main concern is the amount of sugar.
To sweeten the cocoa butter, companies typically add a very large amount of sugar, often making it the first ingredient on the package. You’ll get more beneficial cocoa and much less sugar when you choose dark chocolate. However, moderation is key! It’s totally fine to enjoy white chocolate every once in a while, but just be sure to keep your portions in check.
These two cream options are considered interchangeable. Just be sure to use heavy whipping cream to get the perfect consistency for these coconut treats.
There are so many fun ways to play with these truffles! I like to arrange them standing up on a tray or platter at the dessert table. One great idea is to make mini snow globes! Invert a wide-mouth glass mason jar and place the snowman directly on the inside of the lid. Add a few extra coconut shreds for snow and some sugared cranberries, then seal the jar. You can even paint on little snowflakes or trees to make them pop. Such a cute option for gift-giving or a special occasion!
Storage Guidelines
These truffle balls can be stored in an airtight container in the fridge for up to a week or in the freezer for up to 1 month. It can help to place a sheet of wax paper between the layers to separate them. Be sure to thaw them in the fridge overnight before displaying them.
They should only stay at room temperature for a maximum of two hours before they go back into the fridge or freezer.
