Simple: This recipe comes together so quickly and easily with simple ingredients, a lot of which you will already have in your pantry. You can prep the dish in the morning and then slow cook it throughout the day in your crock pot for a fuss free dinner that evening.
Make ahead: This recipe make 6 to 8 hearty servings and it keeps well in the fridge as well as the freezer. It’s perfect for meal prep and is easily reheated.
Nutritious: This high protein dinner is loaded with fresh vegetables and is made with no added sugar. It’s low in saturated fats and is around 315 calories per serving.

Place the chicken thighs in a bowl, season with salt and pepper and dust with flour.
Brown the chicken thighs on all sides in a hot skillet ad set to one side.
Can you make chicken cacciatore on the stovetop?
If you don’t have a slow cooker, you can easily make this meal on the stove top in one pot. It will take around an hour and a half to make this way and the taste is still amazing!

What do you serve it with?
Slow cooker chicken cacciatore is great to serve over spiralized veggie noodles, rice or with potato and vegetable sides. I also like to finish mine with a sprinkling of parmesan.

Can you make it ahead of time?
Definitely! Once you have made the recipe, let it cool completely before transferring to an airtight container. It will keep well in the fridge for up to 4 days and in the freezer for up to 3 months.
To reheat: If reheating from frozen, thaw the frozen meal in the fridge overnight and reheat it in a skillet until an instant read thermometer reads 165ºF when inserted into the chicken. Alternatively, you can reheat it in the microwave as well.

Recipe Notes and Tips
- Use good quality boneless skinless chicken thighs in this recipe. If desired, you can also sub in skinless boneless chicken breasts.
- Be sure to brown the chicken all over in the skillet before transferring to the slow cooker. This will help to lock in the flavour and keep it nice and juicy.
- Taste before serving and adjust the salt and pepper to your taste.

Slow Cooker Chicken Cacciatore
Ingredients
- 2 lbs boneless skinless chicken thighs
- 1/4 cup brown rice flour can sub in regular flour, if desired
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 large onion chopped
- 1 large bell pepper sliced
- 1/2 lb sliced fresh mushrooms
- 1 can fire roasted tomatoes 398mL
- 2 cups marinara sauce
- 1 can tomato paste 6 oz
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1 tsp dried basil
- 3 garlic cloves minced
- Grated Parmesan cheese for serving optional
Instructions
- Place chicken thighs in a bowl and season with salt and pepper. Next, dust chicken with flour. Heat the stove to high. Add 1 tbsp of oil to a large skillet and brown chicken on all sides in oil, about 4-5 minutes per side. Remove chicken to platter.
- Add the remaining tablespoon of oil to the same skillet and cook and stir the onion, pepper and mushrooms for 5 minutes, or until softened and fragrant. *You can also do these steps in your slow cooker if it has a saute function.
- Add tomatoes, marinara sauce, tomato paste, herbs, and garlic to the slow cooker. Stir to combine.
- Next, add the chicken and vegetables to the slow cooker and toss gently to coat in sauce. Cook for 6-8 hours on low or 3-4 hours on high. Season with salt and pepper to taste.
- Serve over pasta, zucchini noodles, spaghetti squash or rice and garnish with Parmesan cheese, if desired.
