Ingredient Notes

For the salad
- Fresh arugula: This is the ideal base since arugula has more of a peppery flavor that complements the fresh fruits. Feel free to try baby spinach instead or use a mix of the two.
- Blueberries: Fresh blueberries add a nice pop, as well as a range of vitamins, minerals, and fiber.
- Fresh peaches: Choose fully ripe peaches for maximum flavor.. Freestone peaches are the best since you can remove the pit without any mess! Feel free to use white peaches, nectarines, or even other types of stone fruit.
- English cucumber: For a crisp, cooling bite.
- Crumbled feta cheese: Salty feta adds a nice creaminess. Goat cheese will also work instead.
- Slivered almonds: For crunch and healthy fats. Be sure to toast them first for the best flavor.
- Fresh basil: Adds an aromatic note. If you aren’t into basil, feel free to try fresh mint instead or leave it out altogether.
For the lime salad dressing
- Lime juice: Adds a bright, aromatic note that makes the salad taste even more refreshing.

Storage Guidelines

Ingredients
For the salad
- 5 ounces arugula
- 2 cups fresh blueberries
- 2 cups chopped or sliced peaches
- Half an English cucumber, quartered and sliced
- 3/4 cup crumbled feta cheese
- 1/2 cup slivered almonds, toasted
- 2 tablespoons chopped fresh basil

- 3 tablespoons lime juice
- 2 tablespoons light olive oil
- 2 tablespoons honey
- 1 tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground pepper
