Summer Blueberry Peach Salad with Feta Cheese

Studded with juicy peaches, plump blueberries, crisp cucumber, and crumbled feta, this easy blueberry peach salad is the dreamiest summer salad. It's a little sweet, crunchy, and coated with a vibrant lime vinaigrette to provide an extra pop of flavor. Ideal for potlucks, picnics, BBQs, and more! {Gluten-free & Vegetarian}

Ingredients
  

For the salad

  • 5 ounces arugula
  • 2 cups fresh blueberries
  • 2 cups chopped or sliced peaches
  • Half an English cucumber, quartered and sliced
  • 3/4 cup crumbled feta cheese
  • 1/2 cup slivered almonds, toasted
  • 2 tablespoons chopped fresh basil

For the dressing

  • 3 tablespoons lime juice
  • 2 tablespoons light olive oil
  • 2 tablespoons honey
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper

Instructions

  • In a skillet, set over medium heat, toast almonds until golden brown and fragrant, about 3 minutes. Set aside to cool.
  • Combine the dressing ingredients in a small bowl or jar.
  • Toss together the salad ingredients in a large bowl.
  • Pour desired amount of dressing over the salad. Serve immediately and enjoy!

Notes

  • Watch the almonds closely and toss them every once in a while to ensure they don't burn.
  • If you make this salad ahead of time, wait to add the dressing until right before serving to prevent the greens from wilting.
