Summertime is one of my favourite times of year because it means that this Greek Cucumber Noodle Salad starts to make a more regular appearance on our menu!
With refreshing cucumber noodles and tomatoes, salty feta and olives, it’s the perfect side dish to serve up when the warmer temperatures arrive… and totally crave-worthy too!
Not only is this easy cucumber salad recipe great for entertaining and serving a crowd, it also works well for a light and healthy weeknight meal that the whole family will love! Pair it along with some grilled chicken or burgers for the ultimate summertime feast!

How do you make cucumber noodles?
It’s easy! Simply grab an English cucumber and slice off each of the ends since a flat base is best to work with when spiralizing vegetables.
Cut the cucumber in half to prevent the strands from being too long and insert the cucumber between the blade and the pointy end of the handle of your spiralizer.
Next, turn the crank and watch your cucumber transform into delicious vegetable noodles! It’s actually pretty fun once you get started.
My favourite spiralizer to use is the Paderno Spiralizer. I’ve had this thing for years now and it hasn’t failed me yet. In fact, it’s produced some pretty tasty veggie creations!
Required ingredients for salad:
The amazing thing about this salad is that it has a super simple ingredients list that mimics that of your traditional Greek salad:
- Cucumbers
- Diced tomatoes
- Olives
- Red onion
- Feta cheese
- Homemade Greek salad dressing
How to Make Mediterranean Cucumber Salad
In a medium bowl, whisk together olive oil, lemon juice, vinegar, oregano and garlic. Season with salt and pepper, to taste.
Add the cucumber noodles, diced tomatoes, red onion, feta cheese and olives to a large bowl.
Add the desired amount of dressing and toss to combine (I only used half the dressing). Enjoy!
Storage guidelines
You can store this cucumber salad recipe in the fridge for up to two days. You’ll notice that quite a bit of liquid is released from the cucumber noodles if sitting for a while so it might be a bit watery at the bottom of the bowl, but I don’t find that the overall flavour of the salad is impacted.
By allowing it to sit, it just has more opportunity to absorb the flavours of the dressing! Plus, you can always drain some of the extra liquid from the bottom of the bowl when ready to serve.
What to serve with Greek cucumber salad:
I swear, you could eat this salad with just about anything or even by itself, but it tastes especially good paired with the following options:
- Grilled chicken (marinated in one of these healthy chicken marinades)
- Chicken Feta Burgers
- Zucchini Turkey Burgers
- Grilled Lemon Garlic Chicken Kabobs
- Sheet Pan Greek Chicken & Veggies
- Chicken Caprese Burgers
- Pesto Chicken Burgers
- Easy Falafels on a pita with hummus
Recipe Tips
- Cut cucumbers in half before spiralizing to make the spiralizing process easier and to shorten the cucumber noodle strands. You may also wish to cut the strands in half with kitchen scissors or break up with your hands as you go to prevent them from being too long.
- If you don’t own a spiralizer, you can also thinly slice the cucumbers using a sharp knife or mandoline slicer.
- If you want to get rid of excess water in the cucumber noodles, place them in a wire mesh strainer and sprinkle them with a bit of salt to help draw out some of the excess water. This can help prevent soggy noodles! I do this step if I have time, but it’s not 100% necessary. The salad is still delicious even if you choose to skip this step!

Greek Cucumber Noodle Salad
Ingredients
For the Dressing:
- 1/3 cup olive oil
- 2 tsp fresh lemon juice
- 3 tbsp red wine vinegar
- 2 tsp fresh oregano minced (or sub in 1/2 tsp dried oregano)
- 1 garlic clove minced
- Salt and pepper to taste

- 1/2 medium red onion thinly sliced
- 1/2 cup crumbled feta cheese
- 1/3 cup kalamata olives pitted and chopped
