This spiralized Greek Cucumber Noodle Saladis filled with heart-healthy Mediterranean ingredients and flavors and is so easy to prepare! Serve with a side of grilled chicken or a burger for a light and refreshing meal. This might just become your new favorite salad! {Gluten-free, keto, low carb and vegetarian}
2teaspoonsfresh oreganominced (or sub in 1/2 tsp dried oregano)
1garlic cloveminced
1/4teaspoonseach salt and pepper
For the Salad:
2English cucumbers,spiralized*
1cuphalved cherry tomatoes
1/2medium red onion,thinly sliced
1/2 cupcrumbled feta cheese
1/3cupsliced kalamata olives(pitted)
Instructions
In a medium bowl, whisk together olive oil, vinegar, lemon juice, oregano, garlic, salt and pepper.
Add the cucumbers, tomatoes, onion, feta cheese and olives to a large bowl. Add desired amount of dressing and toss to combine (I only used half the dressing). Enjoy!
Notes
*If you don't own a spiralizer, you can also thinly slice the cucumbers using a sharp knife or mandoline slicer.*Cut cucumbers in half before spiralizing to make the spiralizing process easier and to shorten the cucumber noodle strands. You may also wish to cut the strands in half with kitchen scissors or break up with your hands as you go to prevent them from being too long.*If you want to get rid of excess water in the cucumber noodles, place them in a wire mesh strainer and sprinkle them with a bit of salt to help draw out some of the excess water. This can help prevent soggy noodles! I do this step if I have time, but it's not 100% necessary. The salad is still delicious even if you choose to skip this step!
