The good news is, 1 cup of the pancake mix makes about 10 pancakes, which is enough for a few servings for the week! Each pancake has about 4 grams of protein, so for several pancakes, you can pack close to 20 grams of protein for a satisfying start to the day.
When you’re ready to make the protein powder pancakes, all that you have to do is blend together one cup of the mix with fresh eggs, egg whites, an overripe banana, coconut oil and vanilla. Then cook the pancakes on a hot skillet or griddle. In a matter of minutes, you’ll have high protein fluffy pancakes all ready to go!

- Preheat a large griddle or nonstick pan to medium-high. Grease the skillet with cooking spray or coconut oil. Place 2 heaping tablespoons of batter into the skillet. Cook for 2-3 minutes, or until the pancake starts to bubble and the edges begin to harden. Flip the pancake and cook for 1-2 minutes more.
- Serve pancakes with sliced banana, peanut butter, chocolate chips, coconut and maple syrup or other desired toppings.

Instructions
To make the protein pancake mix:

My husband can’t have grain flour, can I substitute almond or coconut flour?
I haven’t personally tried using almond or coconut flour in this mix. If you’re looking for a recipe without grain flour, you could try this one instead. The recipe is for waffles, but it may work if you make the batter into pancakes as well. Hope that helps!
