Ingredient Notes
- Avocados: Avocados are super nutritious and loaded with potassium, healthy fats and fibre. For this pudding, use ripe avocados that are not overly firm for best results.
- Cacao powder: The cacao powder makes this pudding super rich and provides a dose of antioxidants. If possible, use cacao powder rather than Dutch processed cocoa or baking cocoa powder since it lends a richer and bolder flavour and offers a higher amount of antioxidants.
- Unsweetened almond milk: You can also use regular milk if you don’t required a plant-based option, or use any other plant-based milk alternative like soy, rice or coconut.
- Maple syrup: I used 100% pure maple syrup as a sweetener. You can use sub in honey if not vegan.
- Vanilla extract: For sweetness and flavour. Use pure rather than imitation if possible.
Step by Step Instructions
Place all of the ingredients into a food processor and blend on high until the ingredients have broken down.
Give the pudding a good stir and continue blending until very smooth and creamy. Taste and adjust according to personal preference.
Serve immediately or store in the fridge for later.
Recipe Tips
- Use avocados that are very ripe as they will have a creamier consistency and will break down more easily to form a smooth pudding. If the avocados aren’t ripe enough, they may be too firm and harder break down, which may result in chunks throughout the pudding.
- Make sure that you blend the pudding really well to avoid any chunks of avocado being present. I also recommend stirring the pudding a few times throughout the blending process to make sure all of the ingredients are fully incorporated.
- If you find that the avocados in the pudding are having trouble breaking down, add a bit more almond milk one tablespoon at a time until desired consistency is reached.
- You can add more maple syrup if you’d like your pudding to be sweeter or more cacao powder if you want it to be richer in flavour. Taste before serving and adjust if needed.

Can you freeze this pudding?
Yes! Transfer your pudding into a freezer-safe container, bag, or wrapped in the cups or mason jars you plan to serve it in, and it will keep well for up to 3 months. Thaw it in the fridge overnight before serving. You could even freeze it in popsicle molds to make healthy pudding pops!

- 1/2 cup unsweetened cacao powder
- 1/3 cup plus 2 tablespoons unsweetened almond milk
- 1/2 cup maple syrup*
- 1 teaspoons pure vanilla extract

Avocados are all different sizes, and here in Florida, they can be huge. So when you say (4), is it possible to give a cup amount?
Sorry, I didn’t realize that there were super huge avocados! I weighed the avocados that I used and each one was about 200 grams, so for this recipe you would need about 800 grams of avocados. Hope that helps!
