A few months ago, I posted my Cashew Pesto Chicken recipe and promised a couple of follow-up posts on how I actually like to use this chicken for weekly meal prepping.
The first recipe that I posted using this chicken was for this Pesto Chicken Pizza, which is one of my favourite meals for busy weeknights. It’s so easy and if you’re a fan of thin crust crispy pizza, this recipe is for you!
The second recipe, of course, are for these Pesto Chicken Stuffed Sweet Potatoes.

Now let me just say, if you haven’t tried stuffing things into your sweet potatoes, you are seriously missing out.
I actually only just found out that you could stuff sweet potatoes with fun and delicious things like chicken, taco meat (you’ve gotta try these sweet potato taco boats) and beans and chili. Since making this discovery, there’s been NO turning back.
In the past, my number one way to consume sweet potatoes was to bake them as sweet potato fries, but now, to switch things up a bit, I love to stuff them with filling and delicious toppings!
Like this dairy-free pesto chicken, for instance.
Here’s what I recommend for super easy meal prepping:
- Make up a double batch of the shredded pesto chicken when you have a spare moment (it takes less than 20 minutes, and most of that time, the chicken is hanging out in a pot of boiling water).
- One night during the week, use half the pesto chicken for this pesto chicken pizza.
- Another night during the week, use the remaining pesto chicken to stuff into baked sweet potatoes.
It’s really no-brainer.
And that’s why I love it so much.
Basically, you just have to poke some holes in the sweet potatoes with a fork and pop them in the oven for 50-60 minutes.
If you’re really in a pinch, you can cook up the sweet potatoes in the microwave for 6-10 minutes until they’re soft.
Slice them open lengthwise and fill them up with this flavourful chicken for a protein and fibre-packed delicious and filling meal! They taste especially delicious with this Healthy Waldorf Salad!
I love meals where you can cook once and eat twice because as a busy mom, there’s only so much time to be spent slaving away in the kitchen.
Plus, this pesto chicken is so good that you’ll WANT to eat it twice (if not more) in one week! It’s a great way to use up the fresh basil in the garden or fridge and incorporate some more vitamin A and potassium rich green and orange vegetables into your diet as well!
Not to mention the protein! At 22g per serving, that generous dose of protein will be keeping you nice and full until your next mealtime.
What more could you ask for than an easy, delicious, nutritious and satisfying meal?

Pesto Chicken Stuffed Sweet Potatoes
Ingredients
- 6 medium sweet potatoes washed and pierced with a fork
- Salt and pepper to taste (optional)
- 1 batch homemade pesto (or sub in one cup store-bought pesto)
- 3 cups shredded chicken or about 1lb chicken breasts shredded
Instructions
- Preheat oven to 400 degrees F. Pierce each sweet potato all over with a fork.
- Spray baking sheet with cooking spray or line with parchment paper and place sweet potatoes on sheet. Bake for 50-60min until soft.
- Meanwhile, prepare a batch of pesto according to recipe directions or sub in store-bought pesto. Mix with the shredded chicken until evenly distributed.
- Once the sweet potatoes are cooked, cut in half lengthwise and use a fork to slightly mash the inside of the potato, leaving the skin intact. Sprinkle with a dash of salt and pepper, if desired.
- Top each potato half with the pesto chicken and season to taste. Serve immediately.
