I’m sure I have said this many times before but I have this huge admiration for chocolate and peanut butter. You probably already figured that out if you visited my posts for my chocolate peanut butter overnight oats and these skinny chocolate peanut butter cupcakes.
There is just something about that combo that gets me.

So naturally, I tend to experiment with lots of different recipes that incorporate these ingredients.
My latest concoction are these No-Bake Flourless Chocolate Cookies.
The best part about this recipe is….yes…the chocolate…and the peanut butter, BUT the even better part is that the recipe hardly requires any time at all.
And it’s so good!

How to make no-bake flourless chocolate cookies
So in terms of supplies, you’ll basically need a medium bowl and a cookie sheet. That’s about it.
In the bowl, mix the oats, cocoa powder, coconut, and salt.
Next, add the coconut oil, honey, and peanut butter and mix until well combined.
Line a baking sheet with parchment paper. Using a spoon, scoop the mixture onto the baking sheet and press down slightly to form 12 cookies evenly spaced apart.
You may notice that they will be pretty sticky at this time, but don’t worry, they’ll harden up in the freezer.
Expert tip:
If you’re having trouble getting the mixture off the spoon, wet the spoon to make it easier to drop the mixture onto the baking sheet.
Place the baking sheet in the freezer for at least 30 minutes to allow the cookies to firm up.
Special Tips for serving these no-bake flourless chocolate cookies
These cookies are best consumed when fresh out of the freezer. You’ll want to wait about 5-10 minutes after they’ve been removed from the freezer to begin eating them.
They do tend to get a little sticky (but still yummy) if left at room temperature for too long. That’s why these cookies are best fresh out of the freezer.
How to Store these flourless chocolate cookies
These cookies are best stored in an air-tight container in the freeze for up to three months.
You may wish to separate them with parchment paper in between if storing them in layers.
Can I use quick oats instead of rolled?
You certainly can! The main difference will be that the texture will be a little less chewy and textured as cookies made with the rolled oats.
But still equally delicious!

No-Bake Flourless Chocolate Cookies
Ingredients
- 1 ¾ cup rolled oats
- 2 tbsp. unsweetened cocoa powder
- ¼ cup unsweetened coconut flakes
- Pinch of salt
- ¼ cup coconut oil melted
- ¼ cup honey
- ½ cup natural peanut butter or almond butter
Instructions
- Line a baking sheet with parchment paper.
- In a medium bowl, mix oats, cocoa powder, coconut, and salt.
- Add coconut oil, honey, and peanut butter and mix until well combined.
- Scoop mixture with a small cookie scoop or spoon onto parchment paper and flatten slightly so that they resemble a cookie.
- Place in the freezer for at least 30 minutes.
- Serve immediately (allowing to thaw for several minutes) or keep stored in a sealed container in the freezer.
