I hope you’re not getting tired of the cup posts yet, because I certainly am not getting tired of the cups. In fact, I’m finding the cups to be SUPER convenient, to the point where I want to make even MORE cups.
Yeah. I may be getting a little cup-obsessed.
Cups of all different sizes and flavours (like these Mini Turkey Apple Meatloaf Muffins, Mini Broccoli Cheddar Quinoa Cups and Mini Blueberry Banana Muffins) have officially taken over my freezer, but I’m not complaining ONE BIT because it means quick, easy and healthy meals and snacks for my family and I.
Even though there is virtually no room left in our freezer, I’ll tell you one thing. No one in the family is complaining!
It’s what I like to call healthy convenience food.
This week, I added to the cup selection with these A-MAZINGGG No-Bake Apple Pie Cups.
Now that we’re more than half way through August (crazy, right?!), I’m starting to crave more of the Fall flavours like pumpkin, apple and squash. And REALLY, let’s be realistic here.
What better autumn flavour (or smell!!) is there than apple pie?!
Now I’ll be honest. I’m not much of a pie or tart person. Never have been and probably never will be. The flavourless crust kinda bores me and leaves much to be desired. BUT I do love the fillings of both pies and tarts.
These No-Bake Apple Pie cups are basically like a marriage between a pie and a tart without the boring crust. They have their own unique flavour and texture with the dried apples mixed with the dates, cinnamon and apple pie spice.
These ingredients paired together lend a sweet and satisfying “apple pie meets pecan tart” flavour with a touch of crunch from the pecans.
And the best part is?
There is absolutely NO ADDED SUGAR (although you’d never guess). ANDDD plenty of healthy fats and fibre.
UMMM yeah!!
Plus, there is absolutely NO BAKING required. No slaving away over a stove or oven. Just toss all of the ingredients into a food processor and press start.
Doesn’t get much easier than that!
Although you can roll the mixture into balls, I love the concept of cups because you can use the flat surface to top them up with even MORE super delicious ingredients, like additional dried apples and chopped pecans, which is basically like the icing on the cake.
And it makes for a pretty presentation as well, especially if you’re serving to guests!
Which is highly recommended by the way. Because really, who doesn’t want to eat apple pie in cup form with no added sugar?

No-Bake Apple Pie Cups
Ingredients
- 1 cup dried apples I used dried apple rings
- 1/2 cup pitted dates soaked in boiling water for 10 minutes
- 1/2 cup rolled oats can use gluten-free oats, if necessary
- 1/2 cup chopped pecans
- 1/2 tsp. apple pie spice
- 1/2 tsp. cinnamon
Optional toppings
- Chopped pecans
- Chopped dried or fresh apple
Instructions
- Soak dates in boiling water for 10 minutes to soften.
- Blend all ingredients in food processor until mixture comes together. You may need to add a bit of water if the mixture isn't sticking together.
- Evenly distribute mixture into 8 muffin tin cups, silicone baking cups, or paper cups, pressing down with a spatula or back of spoon to pack down mixture. Place in fridge for at least 30 minutes to firm up. Top with additional chopped dried apple and pecans, if desired (I recommend this step!).
- Store in fridge in air-tight container for up to a week or in the freezer in a container or Ziploc bag for a month.
