This vegan chocolate coconut fudge is rich and chocolate-y and contains a secret ingredient that increases its fibre and protein content. It’s also lower in sugar than your typical fudge so it makes a great healthier dessert or snack. Nut-free, gluten free, dairy-free & vegan.
All throughout the month of June, I was focused on lentils at work.
Focused on lentils at work?
Who does that?!
Basically what that means is that I whipped up a whole bunch of recipes involving lentils, let customers try samples of the recipes and educated them about the benefits of consuming lentils.
Pretty sweet job, eh?
One of the concoctions that I served up, that just happened to be a really big success, was this chocolate coconut fudge.
SO good.
And it legit does taste like fudge!
The best part is that it passed the ultimate test.
The picky little brother test.
Just to give you a bit of background. My little brother is super picky and pretty much turns down anything I make because he thinks that I went all crazy making it healthy.
Which is usually true.
But in all fairness, the things that I make usually taste pretty decent, otherwise I wouldn’t be feeding it to people.
But for whatever reason, he thinks I’m out to get him and cast some healthy spell on him.
As if that’s such a horrible thing.
Anyways, one day, I decided to try this new fudge experiment on him just for fun.
I called it chocolate coconut fudge, but *forgot* to mention to him that one of the main ingredients was lentils.
Key word.
Forgot.
Our conversation went like this.
Me: “Hey Jord, do you want to try some of this chocolate coconut fudge? It’s really good.”
Jord: “So there’s just chocolate in it?”
Me: “Yup. Just chocolate and coconut. Just like regular fudge.” (I wasn’t 100% honest, but wasn’t lying either).
Jord: “Okayyyy….”
I cut a piece and watch as he puts it in his mouth.
Jord: “Mmmm.. It’s really good.”
Me: “Muhahahaha.” (under my breath)
Success.
The lentil fudge passed the little brother test.
The hardest test to pass.
And he didn’t detect a thing.
What I love about this fudge is that it’s made with all clean, unprocessed ingredients, has a dose of healthy fats, protein and fibre, and it’s nut-free!
Perfect little nut-free treat to pack in the kids’ lunch boxes for ‘back to school’ lunches.
Which will be here before we know it!
Beats the cookies, candy and other processed junk.
Plus, I bet they’ll never ever guess that it’s made with lentils.
I dare you to try it!

Chocolate Coconut Fudge
Ingredients
- 1/3 cup sunflower seeds
- ½ cup unsweetened coconut flakes
- 1 cup cooked or canned green lentils rinsed and drained
- 3 Tbsp. cocoa powder
- ¼ cup maple syrup
- 3 Tbsp. coconut oil
Instructions
- Place the seeds, coconut, lentils, cocoa powder, and honey into the bowl of a food processor and pulse until smooth. You may need to scrape down the sides a few times. Scoop out into a bowl.
- Melt the coconut oil over low heat on the stove and stir into the lentil mixture. Transfer the mixture into a small parchment lined pan and chill for 3 hours.
- Once chilled, cut into 12 pieces.
- Store in refrigerator up to one week, or in the freezer for up to three months.
