Why We Love this Creamy Avocado Dressing
- Healthy: Unlike many store-bought creamy dressings, this dressing contains no mayo, strange additives, or added sugar and you can control the sodium level so it’s a great healthier option. It’s also a good source of healthy fats with a generous helping of vitamins and minerals.
- Make ahead: This dressing will keep well in the fridge for a few days, so it’s perfect for your lunch or dinnertime salads during the week.
- Easy to adapt: It’s simple to make this dressing suit your tastebuds by adjusting the seasoning, adding a sweetener or more lemon juice.
Ingredient Notes
- Avocado: Avocado is a great source of healthy fats, and they are the perfect alternative to mayonnaise as they get super creamy when blended. For best results, use an avocado that’s ripe but still slightly firm to prevent it from being too brown and mushy when incorporated with the other ingredients.
- Lemon juice: Use fresh rather than bottled lemon juice for the best flavour.
- Garlic: A freshly minced garlic clove adds a wonderful flavour. You can sub in garlic powder as well if in a pinch.
- Green onion: Just use the green part of the onion for a mild hint of flavour that isn’t too overpowering.
- Parsley: Parsley adds a great herby freshness. You could also try making this with other fresh herbs like cilantro or dill to switch up the flavour.
- Oil: Olive oil is best to use for this dressing, but avocado oil will also work well. I like to use extra virgin olive oil since that’s what I typically have on hand, although you can use light for a milder flavour.
- Water: To thin down the dressing. Use as much or as little as you like to achieve the desired consistency.
Step by Step Instructions
- Add all ingredients to a high power blender or food processor.
- Blend until smooth and creamy. You may wish to scrape down the sides with a spatula and blend again to ensure that all of the ingredients get blended evenly.
Use immediately on your favourite salads or store in the fridge for later.
Recipe Notes
- Use an avocado that’s ripe, but not brown and mushy. If it’s overripe and brown, it won’t have that same bright green vibrant hue.
- You may wish to add more water if you prefer a thinner dressing. Adjust according to personal preference.
- Dressing can be stored in the fridge for up to five days. You can put a piece of parchment paper directly on top of the dressing before covering to help delay the browning process.
- Adapt flavours to taste. If you prefer a more zesty flavour, add more lemon juice. You can also increase the amount of parsley and green onion used as well if you want a more tangy flavour.
- If you want less tanginess, add less green onion. You may also wish to add a bit of sweetener such as drizzle of honey or maple to reduce tanginess as well.
