Snowman Truffles

These adorable coconut snowman truffles will be the star of your holiday party! Unlike other versions out there, these holiday truffles are made completely from scratch with a mixture of white chocolate, coconut cream, and shredded coconut. They're perfectly decadent and adorable at the same time. The perfect festive treats for any event! {Vegetarian & Gluten-Free-Friendly}

Ingredients
  

For Coconut Truffles

  • 2 cups plus 1 tablespoon coarsely chopped white chocolate, divided
  • 1/2 cup coconut cream
  • 3/4 cup unsweetened shredded coconut, plus more for coating

For Coating

  • 1/2 cup unsweetened shredded coconut

For Decorations

  • 20 mini chocolate chips for eyes
  • 1 dried apricot, cut into tiny wedges for nose
  • 30 edible pearls for mouth
  • 20 mini pretzel sticks for arms

Instructions

  • Place 2 cups of chopped white chocolate and coconut cream in a medium heat-proof bowl. Carefully microwave in 20-second intervals, stirring in between each interval, until melted and smooth. Alternatively, you can melt it using a double boiler on the stove, stirring occasionally. Stir in ¾ cup shredded coconut until distributed. Cover the bowl and chill in the refrigerator for 4-6 hours or until firm.
  • Once firm, place 1/2 cup shredded coconut in a small bowl. Take the chocolate mixture out of the fridge. Use a small ice cream scoop, melon baller, or spoon to scoop out small sections and form them into balls with your hands. Roll each ball in coconut and place on a baking sheet lined with parchment paper. Freeze for 20 minutes.
  • Remove 10 of the balls from the freezer (these will be the snowman heads), and leave the rest in the freezer (these will be the snowman bodies). For each of the snowman heads, poke in two mini chocolate chips for eyes, 1 small dried apricot sliver for nose, and 3 edible pearls for the mouth. 
  • Next, melt the remaining 1 tablespoon of white chocolate in 20 second intervals in a bowl in the microwave until smooth.  
  • Remove the remaining truffles from the freezer. Dab a small amount of melted white chocolate on the top of each of the balls. This will act as glue to stick the snowman head to the body. Stick the decorated snowman heads to the dab of white chocolate and press down gently to help it adhere.
  • Carefully poke two pretzel sticks into each side of the bottom ball for the snowman’s arms.
  • Store snowman truffles in the fridge in an airtight container for up to a week or freeze for up to a month.
  • Serve chilled. To thaw, leave them in the fridge overnight.

Notes

  • The truffle mixture will be a bit soft and sticky when rolling it into balls, but will become easier to handle once you coat the truffles in the shredded coconut. They'll also firm up once you store them in the fridge.
  • If the truffle mixture becomes too soft, you can place it back in the fridge or freezer for a few minutes to make it less sticky and easier to form into balls.
  • To make it easier to decorate the snowman's face, I like to use a wooden skewer or toothpick to poke small holes into the truffle where I plan to place the eyes, nose and mouth. Then, just poke the chocolate chip eyes, dried apricot nose and edible pearls where the holes are so that you don't have to press too hard on the snowman's face.
  • If the snowman's head flattens when you add the facial decorations, just carefully remold it into a ball with your hands before sticking it onto the body.
  • These truffles will firm up when stored in the fridge, so you may wish to leave them at room temperature for a few minutes before serving to allow them to soften up a bit.
  • These snowmen truffles are a bit more indulgent, so they should be consumed in moderation as a special treat. To lighten them up, you can just decorate the snowman heads without the second ball attached for the body or make the balls smaller. They work either way!
