Dry ingredients:

  • 3/4 cup packed blanched almond flour
  • 1/2 cup tapioca flour
  • 1 tbsp coconut flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon

Wet ingredients:

  • 3 eggs
  • 1/2 cup unsweetened almond milk
  • 3 Tbsp. coconut oil melted room temperature
  • 2 Tbsp. maple syrup
  • 1 tsp. apple cider vinegar
  • 1 tsp. vanilla extract

  • In a large bowl, miix all of the dry ingredients together and stir until there are no longer any lumps.
  • In a separate bowl, whisk together the wet ingredients until smooth.
  • Add the wet ingredients to the dry and mix until well combined.
  • Preheat your waffle iron to high. Grease iron using desired method.
  • Spoon batter into bottom of waffle iron and spread with spoon or spatula.
  • Close the waffle iron. The cooking time will depend on your waffle iron and desired crispiness. As a general rule, most waffle makers will cook the waffle in 1-3 minutes.
  • Carefully remove the waffles with a fork and place on a cooling rack. This will help to prevent the waffles from getting soggy.
  • Continue with remaining batter.
  • Serve with fruit, maple syrup or other desired toppings.
