In a large bowl, mix the almond flour, tapioca flour, coconut flour, baking powder, salt and cinnamon together and stir until there are no longer any lumps.
In a separate bowl, whisk together the eggs, milk, coconut oil, maple syrup (if using), vinegar and vanilla until smooth.
Add the wet ingredients to the dry ingredients and mix until well combined.
Preheat your waffle iron. Spray with cooking spray or grease iron using desired method. Spoon batter into bottom of waffle iron and spread with spoon or spatula.
Close the waffle iron. The cooking time will depend on your waffle iron and desired crispiness. I cooked mine at setting 2 for 4-5 minutes.
Carefully remove the waffles with a fork and place on a cooling rack. This will help to prevent the waffles from getting soggy.
Continue until remaining batter has been used up.
Serve with fruit, maple syrup or other desired toppings.
