Paleo Waffles with Almond Flour

Crispy on the outside yet tender and fluffy on the inside, this paleo waffle recipe makes the best waffles! They have a similar texture to Belgian waffles, but are made without any dairy or refined grains. These delicious almond flour waffles will be your new go-to!

Ingredients
  

Dry ingredients:

  • 3/4 cup packed blanched almond flour
  • 1/2 cup tapioca flour
  • 1 tablespoon coconut flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon

Wet ingredients:

Instructions

  • In a large bowl, mix the almond flour, tapioca flour, coconut flour, baking powder, salt and cinnamon together and stir until there are no longer any lumps.
  • In a separate bowl, whisk together the eggs, milk, coconut oil, maple syrup (if using), vinegar and vanilla until smooth.
  • Add the wet ingredients to the dry ingredients and mix until well combined.
  • Preheat your waffle iron. Spray with cooking spray or grease iron using desired method.
  • Spoon batter into bottom of waffle iron and spread with spoon or spatula.
  • Close the waffle iron. The cooking time will depend on your waffle iron and desired crispiness. I cooked mine at setting 2 for 4-5 minutes.
  • Carefully remove the waffles with a fork and place on a cooling rack. This will help to prevent the waffles from getting soggy.
  • Continue until remaining batter has been used up.
  • Serve with fruit, maple syrup or other desired toppings.

Notes

  • I used the Cuisinart Belgian Waffle Maker to test this recipe. The number of waffles this recipes yields will depend on the size of your waffle maker.
  • To keep your waffles from getting soggy, let them cool on a baking rack instead of a plate.
  • Be sure to use the right balance of flours to get the perfect texture.
  • Take the time to let your griddle warm up properly and grease it well or you may have trouble removing the waffles.
