Cottage Cheese Chocolate Mousse {High Protein}

This naturally sweetened cottage cheese mousse is decadently rich and creamy with a major dose of chocolate flavor in every single spoonful. It's the perfect healthy dessert to satisfy your sweet tooth and best of all, it contains 15 grams of protein in each serving. Serve it on its own or with fresh fruit for a healthy, high protein dessert any time you need a chocolate fix!

Ingredients
  

  • 1/4 cup dark chocolate chips (I used Lily's)
  • 2 cups 2% cottage cheese (or full-fat)
  • 3-4 tablespoons honey (depending on how sweet you like it)
  • 2-3 tablespoons unsweetened cocoa powder
  • 2 teaspoons vanilla extract
  • 1-2 tablespoons milk (if needed)

Instructions

  • Pour the chocolate chips into a small microwave-safe dish and microwave in 20-30 second increments, stirring in between each interval, until it is fully melted.
  • Next, to a small food processor or high-speed blender, add the cottage cheese, melted chocolate, honey, cocoa powder, and vanilla extract. Blend on high for 20-30 seconds. Use a spatula to scrape down the sides of the food processor or blender and then blend again until smooth. If the mixture is too thick to blend, add a tablespoon or two of milk and blend again until smooth. If it’s still grainy, continue blending until creamy.
  • Divide the mixture into smaller individual bowls or glasses. Place in the fridge for at least an hour to allow it to firm up slightly. The longer it sits in the fridge, the thicker and more mousse-like it will become.
  • Serve it with a dollop of whipped cream and/or chocolate shavings and your favorite fruit, if desired. Enjoy!

Notes

  • If you find that the mixture is too thick to blend, add 1 tablespoon of milk at a time and frequently scrape down the sides of the blender with a spatula until the mixture blends into a smooth and creamy consistency.
  • Avoid adding too much milk, as we still want the mixture to be on the thicker side so that it firms up into a mousse.
  • If you prefer a lower sugar option, sub in some no sugar-added chocolate chips. I like the Lily's brand.
