Christmas Wreath Veggie Tray

Elevate your holiday veggie tray by arranging your favorite vegetables into the most beautiful holiday wreath with a gorgeous red pepper bow! This Christmas wreath veggie tray is a fun and exciting way to serve raw veggies this year and is a healthy alternative to the sugar-laden sweets and treats, too.

Ingredients
  

  • 1 1/2 large English cucumbers, sliced into rounds
  • Half of a head of broccoli, cut into small florets
  • Half of a head of cauliflower, cut into small florets
  • 1 pint cherry tomatoes
  • 1 large carrot
  • 1 thin slice of mozzarella cheese
  • 1 red bell pepper

Instructions

  • Get out a large circular plate or veggie platter. Arrange the cucumber slices in two rows in a circular pattern so that they’re slightly overlapping. 
  • At the 10 o'clock position, create a line on a diagonal with some cauliflower florets. Leave a 2 inch gap and create a line with some broccoli florets. Fill in the gap between the cauliflower and broccoli with some cherry tomatoes. Repeat this same pattern at the 2 o’clock position, 4 o’clock position and 8 o’clock position. You should have four evenly spaced sections of cauliflower, cherry tomatoes and broccoli.
  • Next, using a mini star-shaped cookie cutter, cut mini stars out of the carrot slices. Place the carrot stars on top of each section of tomatoes. I used two carrot stars for each group of tomatoes, but you can add more if you wish.
  • Next, cut out 3 stars from the cheese slices. Place each one at the 9 o’clock position, 12 o’clock position and 3 o’clock position.
  • Cut the red bell pepper into the shape of a bow, as pictured. Place the bow at the 6 o’clock position on the veggie wreath.
  • Place a bowl in the center of the wreath if you’re using a large plate. Add your preferred dip to the center of the wreath and serve, or store in the fridge for later.

Notes

  • When cutting the broccoli and cauliflower, it’s best to cut them into small florets. You may need to trim the stems so that the florets sit more flat on the cucumber slices. This will help hold the tomatoes into each section.
  • I used a 1-inch star cookie cutter to cut the stars from the carrot slices, and a 2-inch star cookie cutter for the cheese. You can find both sizes in this set of cookie cutters!
  • I used a veggie tray platter that was 14 inches in diameter for this veggie wreath and it already had a dip bowl in the center, but you can also use a large circular plate or platter. Place an upside down bowl in the center of the plate as a guide to help create the shape of a wreath out of the vegetables.
  • You may need to adjust the amount of vegetables used depending on the size of your platter. You can also continue to add to it as well.
