Place a small bowl upside down (I used a clear glass one) in the center of a large charger plate, circular tray or dinner plate.
Spread an even layer of hummus around the bowl, leaving an inch or so from the edge of the plate, so that it forms the shape of a wreath.
Next, spread an even layer of tzatziki on top of the layer of hummus around the edge of the bowl, leaving about an inch of hummus showing around the edges.
Evenly distribute the diced cucumber, cherry tomatoes, sliced olives, crumbled feta, diced red onion, and chopped parsley over the layers of hummus and tzatziki, so that it looks like a colorful wreath.
Cut a bow shape from the red bell pepper and arrange at the bottom of the “wreath.”
Drizzle with a bit of olive oil, if desired. Serve immediately or cover carefully with saran wrap and place in the fridge for later.
Serve with pita chips, crackers and vegetables. Enjoy!
