It's also incredibly easy, requires minimal effort, and clean-up is a breeze since it's all made in one pot! {Vegetarian}
10ouncesuncooked pasta (whole wheat, regular or gluten-free)
2pintscherry tomatoes
3shallotsthinly sliced (optional)
6garlic cloveshalved and smashed
1/2cupextra-virgin olive oil
1teaspoonItalian seasoning
1/4teaspooncrushed red pepper flakes
8ounceblock of feta
1poundfresh asparaguscut into 1 inch pieces
Zest of one lemon
1/4cupsliced fresh basil
Salt and pepper to taste
Instructions
In a large oven-proof skillet or Dutch oven, bring salted water to a boil. Cook pasta until al dente according to package directions. Reserve ½ cup pasta water before draining. Set pasta aside.
Preheat oven to 400°F. In the same large ovenproof skillet (can also use a casserole dish), combine tomatoes, shallots (if using), garlic, and all but 1 tablespoon of oil. Season with Italian seasoning and red pepper flakes and toss to combine.
Place feta into the centre of tomato mixture and drizzle with remaining 1 tablespoon of oil. Bake for 30 minutes.
Remove from oven, add chopped asparagus, mixing it in with the oil, and bake for an additional 15 minutes, or until tomatoes are bursting and feta is lightly golden on top.
Add cooked pasta, reserved pasta water, and lemon zest to the skillet with tomatoes, asparagus and feta. Mix until combined. Garnish with fresh basil and serve warm.
Notes
To save time: you can also cook the pasta in a separate pot while the tomatoes and feta are baking. The creamy feta pasta bake can be made in an ovenproof skillet or medium-sized baking dish.
Avoid overcooking noodles: For best results, don’t overcook the noodles or they’ll turn mushy and will easily disintegrate when you mix the pasta in with the vegetables and feta. Cook it until it’s just al dente.
If you forget to reserve some pasta water, you can also add a bit of milk in its place. It helps make the sauce more creamy.
