Make Ahead Breakfast Burrito Casserole

Set your mornings up for success with this delicious breakfast burrito casserole! It's loaded with protein and filling veggies to satisfy your whole family. It's a great make-ahead breakfast that can be reheated in just a few minutes in the microwave!

Ingredients
  

  • 1 pound breakfast sausages, casing removed
  • 1 medium yellow onion diced
  • 2 bell peppers (any colour) diced
  • 1/2 cup plain Greek yogurt
  • 12 large eggs
  • 1 cup milk
  • 15 ounces frozen hash browns (optional)
  • 1/2 cup chunky salsa *see notes
  • 5 soft taco size whole wheat or regular flour tortillas cut into 1 inch squares
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 teaspoon each salt and ground black pepper

  • Sliced avocado
  • Salsa
  • Chopped cilantro
  • Sliced green onion
  • Sour cream

Instructions

  • Preheat oven to 350℉. Spray a deep sided 13"x9" baking dish with non stick cooking spray.
  • Heat a large skillet over medium high heat. Add the sausage, onions, and peppers. Season with a pinch of salt. Cook, breaking up sausage, until sausage is cooked through, about 7-10 minutes. Drain well.
  • In a large bowl, whisk the Greek yogurt and milk. Add the eggs, 1 teaspoon salt, 1 teaspoon black pepper, whisk vigorously to blend eggs.
  • Layer the casserole: Place the hashbrowns in the bottom of the prepared dish (if using), followed by half of the sausage mixture, 1 heaping cup of cheese, the salsa, and half of the eggs. Spread the tortilla pieces evenly on the casserole and press firmly. Add remaining sausage, eggs, and cheese.
  • Bake covered tightly with foil 35 minutes. Remove cover and bake an additional 20-30 minutes, or until the casserole is cooked through and egg in the center of casserole is set. Allow to cool 10-15 minutes before garnishing with green onion, and serve with your favorite toppings.

Notes

  • *To keep the casserole from getting soggy, scoop the salsa with a slotted spoon before measuring.
  • You can add any veggies or filling you like, such as mushrooms, fresh spinach, or some crumbled cooked bacon.
  • To make this casserole low carb, simply leave the tortillas and hash browns out.
  • Use any breakfast sausage you like. Chicken or turkey would work too.
  • Hash browns can be added into the casserole frozen or thawed. It’s best to use frozen, since the refrigerated ones contain a lot of preservatives to keep the potatoes from turning brown in the bag.
