Iced Pumpkin Spice Coffee Recipe {Starbucks Copycat}

Enjoy your favorite pumpkin spice latte even when temperatures soar with this refreshing pumpkin iced coffee recipe! It's blended until smooth and creamy, then poured over ice. It just might be the very best way to enjoy this classic fall drink! {Gluten-Free & Dairy-Free-Friendly}

Ingredients
  

  • 1/2 cup strong brewed black coffee or espresso cold or at room temperature
  • 3/4 cup milk or milk alternative (i.e. almond milk, oat milk, coconut milk, etc.)
  • 2 tablespoons pure pumpkin puree
  • 1 tablespoon pure maple syrup (or more to taste)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of sea salt
  • Ice cubes

For topping (optional)

  • Whipped cream
  • Sprinkle of pumpkin pie spice or cinnamon

Instructions

  • Add the coffee or espresso, milk, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice and salt to a blender. Blend for a couple of minutes until smooth and combined. Taste a bit, adding more maple syrup or pumpkin spice if desired.
  • Fill a tall glass 1/2-2/3 of the way full with ice cubes. Pour blended pumpkin coffee over top of the ice.
  • For a special treat, top with some whipped cream and a sprinkle of pumpkin spice or cinnamon. Enjoy cold!

Notes

  • Be sure to use pure pumpkin puree rather than pumpkin pie filling. They're not the same thing as pumpkin pie filling is much higher in sugar!
  • You can add more or less maple syrup to taste depending on how sweet you like your iced pumpkin coffee
  • For best results, make sure your coffee is already chilled or at least at room temperature before you use it. Otherwise, the ice will melt quickly and dilute your drink.
  • To avoid diluting the flavor as the ice melts, make ice cubes from leftover coffee and use those instead of regular ice.
