Sweet and spiced with a wonderfully crunchy texture and warm flavor, this Cinnamon Honey Roasted Almonds Recipe is the perfect healthy snack! They're just as delicious sprinkled over a bowl of oatmeal as a savory winter salad, and you can even package them up to give away as a thoughtful homemade gift.
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
In a large microwave-safe bowl, heat honey and coconut oil at low power for 1 minute or until it has a runny consistency. Stir in the cinnamon until combined.
Next, add the almonds and mix until they're evenly coated in the mixture. Spread the almonds in a single layer on the prepared baking sheet.
Bake for 10-12 minutes or until golden and fragrant, tossing a few times while in the oven. Let the almonds cool completely (the mixture will harden up during this time).
Break the almonds into pieces and place into a bowl. Add salt and toss until evenly distributed. Store in an airtight container in the fridge for up to two weeks.
Notes
Keep a close eye on the almonds in the oven since they don't require much baking time and can easily burn. I roasted mine for 12 minutes and found that was perfect. It also helps to toss them every few minutes and rotate the baking sheet.
Allow the roasted almonds to fully cool on the baking sheet since this is the time that they'll harden up and get nice and crunchy.
These honey roasted almonds are best stored in the fridge to prevent them from getting overly sticky. You may need to break them apart if they've been sitting in the container for a while as they start to stick together, or eat them as clusters instead!
