Blueberry Cheesecake Overnight Oats {with Yogurt}

Throw together these quick and easy blueberry cheesecake overnight oats for a breakfast that tastes like dessert! Fresh, juicy blueberries, a sweet cream cheese and Greek yogurt mixture, and nutty, chewy oats are a comforting and satisfying way to start the day. Plus, each serving contains 12g of protein and 4g of fiber! {Gluten-free & Vegetarian}

Ingredients
  

  • 1 cup plain 0% Greek yogurt
  • 2 tablespoons light cream cheese
  • 2-4 tablespoons maple syrup
  • 1 teapoon vanilla extract
  • 1 cup milk
  • 1 1/2 cups rolled oats
  • Pinch of salt
  • 1 cup fresh or frozen blueberries, plus extra for topping

Optional topping

  • Sprinkle of crushed graham cracker crumbs

Instructions

  • In a large bowl, mix together yogurt, cream cheese, maple syrup or honey and vanilla. Stir until the mixture is smooth.
  • Add milk and stir until combined.
  • Add oatmeal, and salt. Stir until mixture is uniform throughout.
  • Divide into four mason jars, cups or bowls.
  • Place in the refrigerator to chill overnight (or for at least 6 hours, but ideally 8 hours).
  • Top with additional blueberries and some crumbled graham cracker crumbs, if desired.

Notes

    • If preferred, you can also allow the mixture to thicken in the mixing bowl and divide it into jars, cups or bowls once thickened. 
    • These overnight oats are very thick and creamy. You may wish to stir in a splash of milk after the oats have been sitting for a while if you prefer a thinner consistency.
    • For more blueberry flavor infused throughout the oats, use frozen blueberries and allow them to thaw and release their juices into the oats.
