Sweet Potato Black Bean Quesadillas {Vegetarian}

These sweet potato black bean quesadillas are super easy to prepare and can be made in less than 30 minutes with only six simple ingredients! Made with sweet potato and black beans, it makes for the ultimate nutrient-packed meal! {Vegetarian & can be made gluten-free}

Ingredients
  

  • 1 medium sweet potato cooked*
  • 1 (14oz) can no salt-added black beans drained and rinse (or 1.5 cups cooked beans)
  • 2 tablespoons reduced-sodium taco seasoning (can use homemade or store-bought)
  • 1/4 cup chopped fresh cilantro
  • 1 cup shredded mozzarella cheese
  • 4 large whole-wheat tortillas

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mash the cooked sweet potato. Add in the black beans, taco seasoning, and cilantro and mix until combined.
  • Lie a tortilla on a flat surface and evenly spread the sweet potato mixture over half the wrap. Sprinkle with a quarter of the shredded cheese. Fold in half and place on baking sheet. Repeat for all four tortillas.
  • Place baking sheet in oven and bake for 20 minutes. Allow to sit for 3-5 minutes. Cut in half using a sharp knife and serve with salsa, Greek yogurt, sour cream and guacamole, if desired.

Notes

*You can cook the sweet potato in the oven at 400 degrees F for 50-60 minutes or in the microwave for 5 minutes or until soft.
*It's highly recommended that you serve the quesadillas fresh from the oven. They just don't have that same crispy factor when reheated.
