Double Chocolate Energy Bites

These double chocolate energy bites are rich and fudgey yet they're packed full of heart healthy fats and antioxidants! Whip up a batch and store in the fridge or freezer for a quick and easy snack on the go! {Gluten-free, Vegan & Paleo}

  • Combine almonds, cashews cocoa and cinnamon in food processor. Process until crumbly.
  • Add vanilla, dates, and coconut oil. Process until mixture is combined. If mixture is still dry, add one tablespoon of water at a time until mixture adheres together.
  • Remove mixture from processor and form into approximately 1 1/2 inch balls. Place the balls on a large plate or piece of parchment paper.
  • Next, pour the dark chocolate chips into a microwave-safe bowl and heat in the microwave for 2-3 minutes or until the chocolate is fully melted. You can also melt the chocolate in a small pot on the stove. Using a spoon, drizzle the melted chocolate evenly over the energy balls.
  • Place balls in fridge to allow chocolate to harden. Store in fridge for one week or freezer for up to 3 months.
