Combine almonds, cashews cocoa and cinnamon in food processor. Process until crumbly.
Add vanilla, dates, and coconut oil. Process until mixture is combined. If mixture is still dry, add one tablespoon of water at a time until mixture adheres together.
Remove mixture from processor and form into approximately 1 1/2 inch balls. Place the balls on a large plate or piece of parchment paper.
Next, pour the dark chocolate chips into a microwave-safe bowl and heat in the microwave for 2-3 minutes or until the chocolate is fully melted. You can also melt the chocolate in a small pot on the stove. Using a spoon, drizzle the melted chocolate evenly over the energy balls.
Place balls in fridge to allow chocolate to harden. Store in fridge for one week or freezer for up to 3 months.
