Buffalo sliders with Sweet Potato "Bun"

Looking to kick your sliders up a notch? These buffalo sliders with a sweet potato bun are not only adorable, they are also packed with nutrients and flavour, especially when paired with the roasted garlic spread. {Paleo & gluten-free}

Ingredients
  

  • 1 lb extra lean ground beef
  • 3 tbsp buffalo sauce
  • 1 garlic clove (try roasting it to add even more flavour)
  • 2 green onions thinly sliced (just the green portion)
  • 2 tbsp almond flour can also sub in panko bread crumbs
  • 1/4 tsp freshly ground pepper
  • 1 large sweet potato cut in quarter inch rounds
  • 1 tsp olive oil

Instructions

  • Preheat oven to 375℉. Line a large rimmed baking sheet with parchment paper.
  • Arrange sweet potato slices in a single layer on baking sheet. Bake 15-20 minutes or until lightly browned and tender, flipping them over halfway through baking time.
  • In medium bowl, combine beef, garlic, green onions, buffalo sauce, almond flour and black pepper. Mix well.
  • Preheat grill to medium-high heat (about 400℉)
  • Divide beef mixture into 8 portions and flatten them into patties. When grill is hot, place patties over direct heat. Grill 5 minutes on each side or until cooked through but not overcooked.
