No-Bake Apple Pie Cups

These No-Bake Apple Pie Cups offer all the flavours of apple pie with no oven required, no added sugar and a healthy dose of fibre and healthy fats! Whip up a batch of these cups and store in the fridge or freeze for a quick and healthy snack or treat! {Gluten-free, dairy-free & vegan}

Optional toppings


  • Soak dates in boiling water for 10 minutes to soften.
  • Blend all ingredients in food processor until mixture comes together. You may need to add a bit of water if the mixture isn't sticking together.
  • Evenly distribute mixture into 8 muffin tin cups, silicone baking cups, or paper cups, pressing down with a spatula or back of spoon to pack down mixture. Place in fridge for at least 30 minutes to firm up. Top with additional chopped dried apple and pecans, if desired (I recommend this step!).
  • Store in fridge in air-tight container for up to a week or in the freezer in a container or Ziploc bag for a month.
