How to Bake Eggs in a Muffin Tin {Oven Baked Eggs}

Don't waste your precious time individually cooking each egg for breakfast! Learn how to bake eggs in a muffin tin for the best oven-baked eggs on the go. This is the best way to cook the perfect eggs for meal prep or for a crowd!

Ingredients
  

  • Olive oil cooking spray
  • 12 large eggs
  • Salt and pepper to taste

To garnish:

  • Finely chopped chives (optional)

Instructions

  • Preheat the oven to 350 degrees F. Spray a regular sized non-stick muffin tin thoroughly with cooking spray or line with silicone muffin liners.
  • Crack an egg into each of the 12 muffin cups. Sprinkle each cup with desired amount of salt and pepper.
  • Bake in the oven for 10-12 minutes for soft baked eggs with a runny yolk; 13-16 minutes for a semi-solid yolk; and 17-20 minutes for a firm yolk similar to a hard-boiled egg.
  • Once baked to your desired doneness, remove pan from the oven and allow the eggs to cool for several minutes. Using a butter knife, carefully work your way around each of the baked egg cups and carefully nudge them out of the pan. Place them on a plate or store in an airtight container.
  • To serve, garnish them with finely chopped chives, if desired.

Notes

  • To gauge doneness: If aiming for a more drippy consistency, you’ll know the egg cups are done when the yolk and egg whites in the middle of each cup still appear a bit soft and liquid-y. They should wiggle a bit when you move the pan. Hard baked eggs will have less wiggle in the centre.
  • Try ramekins instead: If you don't have a muffin tin, or prefer to make a smaller amount, 4 ounce ramekins will work for this recipe as well.
  • To switch it up: You can also line each cup with a slice of deli ham and crack an egg inside each slice. Similarly, you can line the bottom of each cup with some finely chopped sauteed veggies (think mushrooms, spinach, peppers, etc.) and crack an egg on top. Bake according to the times listed above.
