Crispy Air Fryer Chicken Bites

Crispy breaded air fryer chicken bites are a quick dinner the whole family will love! Made with boneless skinless chicken breasts, these delicious homemade nuggets are perfectly seasoned and ready in less than 30 minutes! {Gluten-free-friendly}

Ingredients
  

  • 1/2 cup buttermilk divided
  • 1 1/4 pounds boneless skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup flour (I used whole-wheat)
  • 2 large eggs
  • 2 cups crushed crackers (I used about 38 whole-wheat saltine crackers)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning

Instructions

  • Preheat air-fryer to 390 degrees F.
  • Pour 1/4 cup buttermilk into a shallow bowl. Add chicken and toss to coat.
  • Place flour in a resealable bag. In a shallow bowl, whisk together eggs and remaining buttermilk.
  • In another shallow bowl, combine crushed crackers, paprika, salt, pepper, onion powder, garlic powder, and Italian seasoning.
  • Add raw chicken bites to flour and shake until coated.
  • Next, dip floured chicken in egg mixture, then in cracker mixture, tossing to coat.
  • Place the chicken bites in a single layer in the air fryer basket, leaving some space between each bite. You may need to cook in batches.
  • Spray with olive oil spray. Cook for 8-10 minutes, flipping halfway through, or until the internal temperature of the chicken has reached 165 degrees Fahrenheit.

Notes

  • I used whole wheat saltine crackers and whole wheat flour to add extra fibre but you can use whatever crackers you have on hand.
  • To easily crush crackers, place them in a large sealable bag and pound them with the back of a meat mallet, hammer or roll with a rolling pin.
  • To prevent your hands from getting overly messy, I recommend using the two hand method. Use one hand to dip the chicken pieces into the egg and buttermilk mixture and the other hand to toss with the cracker mixture.
  • I used the Ninja Foodie to test this recipe. The cooking time may vary slightly depending on the type of air fryer you have.
  • These chicken bites taste especially good paired with a honey mustard dipping sauce. To prepare the honey mustard dip, mix together ½ cup mayonnaise, 2 tablespoons honey, 2 tablespoons yellow mustard, 1 tablespoon Dijon mustard and ½ tablespoon lemon juice.
