These air fryer butternut squash cubes are a lightly sweet weeknight or Thanksgiving side dish that can be prepared in less than 30 minutes. Loaded with flavour and nutrients, they're easy to make, kid-friendly, and perfect for pairing with all your favourite sides and mains! {Dairy-free, gluten-free, & vegan}
In a large bowl, toss together the cubed butternut squash, olive oil, maple syrup, cinnamon, salt and pepper until well coated.
Brush some oil on the bottom of the air fryer basket.
Place the butternut squash in the air fryer basket in a single layer, if possible.
Cook at 390 degrees for 20-25 minutes. Check on it after 10 minutes, flip, and continue cooking. Serve warm.
Notes
Make sure that you cut the butternut squash into uniform pieces so that it all cooks evenly. I cut mine into about 1-inch cubes. To make this process faster, you can also purchase pre-cut butternut squash cubes to roast in the air fryer.
Be sure to leave some space between the squash cubes when placing them in the basket of your air fryer rather than piling them up on top of each other. This allows the squash to get nicely brown and crispy on the outside. You may wish to cook the squash in batches if it doesn’t all fit in your air fryer at once.
You may wish to add some additional cinnamon throughout the cooking process. You can add some extra when you check on it after the 10 minute mark, if desired.
All air fryers cook slightly differently so you may need to adapt the cooking time depending on the type and size of your air fryer. I use the Ninja Foodie Air Fryer and found that 20-25 minutes allowed the squash to get soft on the inside and crispy on the outside.
