Easy Sausage Tray Bake

When you're short on time and need to get a family dinner on the table in the hurry, this sausage tray bake is a life saver! Requiring only minimal prep, this one pan sausage and vegetable bake is ready to serve in around 30 minutes!

Ingredients
  

  • 1 lb Italian sausage sliced into 1/2 inch pieces (about 3 cups sliced)
  • 2 large sweet potatoes diced into 1/2'' cubes (about 6 cups diced)
  • 2 heads of broccoli chopped into florets (about 8 cups broccoli florets)
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon each salt and pepper

Instructions

  • Pre-heat oven to 425 degrees F.
  • Add the sliced sausage, chopped broccoli and sweet potato to a large baking sheet (you’ll probably need two).
  • Drizzle with olive oil and sprinkle with the garlic powder and Italian seasoning. Season with salt and pepper. Toss sausage and veggies with your hands until they are fully coated with olive oil and spices.
  • Bake for 20-25 minutes, or until sweet potato is tender, flipping halfway through. Serve warm.

Notes

  • Make sure that the sweet potato is diced small enough. If the chunks are too big, they will require longer cooking time.
  • Slice the sausage when it’s still partially frozen to make it easier to cut. If the sausage is too soft, the sausage will start to come out of the casing when cutting it into pieces. It’s much easier to cut when it’s firm. You can also leave the sausages whole if short on time.
  • You can purchase pre-chopped broccoli florets and sweet potato to save time chopping if tight on time.
  • If I’m in a rush, sometimes I don’t even measure out the olive oil and spices; just sprinkle it on until the sausage and veggies are well coated.
