Easy Avocado Goat Cheese Cucumber Appetizers

This gorgeous cucumber goat cheese appetizer is the perfect appetizer! Each of the little cucumber bites are topped with a flavor-packed avocado and goat cheese mixture and a colorful garnish of sun-dried tomatoes and fresh herbs. They're healthy, incredibly easy to make, so light, and delicious! {Vegetarian, low carb, keto, & gluten-free}

Ingredients
  

  • 2 ounces fresh goat cheese
  • 1 ripe medium avocado
  • Dash of tabasco sauce
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 1/2 medium English cucumbers cut into 1 1/2 inch slices
  • 1-2 sundried tomatoes or roasted red peppers chopped finely
  • Parsley for garnish

Instructions

  • In a medium-size bowl, with a fork, mash together the avocado and the goat cheese until a smooth mixture is formed. Add a dash of tabasco sauce, lemon juice and salt if desired. Mix until well combined.
  • Slice the cucumber into about 15 slices that are approximately 1 ½ inches in thickness.
  • Spoon or pipe mixture onto cucumber slices and garnish with a small piece of sundried tomato or roasted red pepper and parsley. Enjoy!

Notes

  • I highly recommend that you pipe the pretty pastel "icing" onto the cucumber slices. It always turns out SO classy and it doesn't require much skill, even if you have zero experience using a piping bag. You literally just plunk the avocado goat cheese mixture into an icing bag with a tip attached and gently squeeze some of the mixture onto each cucumber slice.
