These Sweet Potato Taco Bites are the perfect appetizer or meal for a crowd and are especially great for game day! They’re packed with so much flavour, no one will ever guess they’re healthy! {Paleo, gluten-free & whole 30}
Preheat oven to 375 degrees F. Wash the sweet potatoes and cut them into 1/2 inch slices.
Place the slices in a large bowl and toss with olive oil, salt and pepper.
Line a baking sheet with parchment paper, and place the sweet potato slices evenly in a single layer across the baking sheet.
Bake in oven for 40-50 minutes or until soft when pierced with a fork.
Meanwhile, while the potatoes are in the oven, cook the ground beef in a large frying pan over medium heat for about 7-8 minutes, stirring often, or until cooked through and no longer pink. Add taco seasoning and cook for an additional 2-3 minutes.
Prepare the guacamole according to directions.
Once the sweet potato slices are cooked, remove from oven and evenly divide the ground beef among them, placing about 1-2 tbsp. on top of each slice. Next, top with equal amounts of guacamole. Serve immediately.
Notes
* For easier preparation, I recommend making the taco seasoning and guacamole in advance, so all that you have to do is cook the sweet potato slices and taco meat and assemble.
