Vegan Lentil Tacos

These vegan lentil tacos are super easy to prepare and you don’t even miss the meat! The perfect way to add more plant-based meals into your weekly menu!

Ingredients:

– Olive oil – Onion – Garlic – Chili powder – Cumin

Heat oil in medium-sized saucepan over medium high heat. Cook onion and garlic until tender, about 3-4 minutes.

Add the spices, lentils, and broth to the pan. Bring to a boil.

Reduce heat to low and simmer for 20-25 minutes until lentils are cooked and liquid has fully absorbed.

Add salsa and stir. Cook for an additional 5 minutes.

Remove from heat. Distribute lentil mixture among 12 taco shells or corn tortillas. Garnish with desired toppings.
