Sweet Potato Hummus Dip

This smoky sweet potato hummus is packed with flavor and can be used as a healthy spread or dip! It’s also low in calories, vegan and gluten-free!

Ingredients:

– Sweet potato – Chickpeas – Tahini – Lemon juice – Extra virgin olive oil

Peel sweet potato and cut up into 1 ½ inch cubes. Bring potato cubes to a boil over medium high heat.

Once it starts to boil, turn down to low and simmer for 15-20 minutes, or until sweet potato is soft when pricked with a fork.

Place cooked sweet potato and remaining ingredients in large food processor.

Cover and process until smooth. If required, add 1 tbsp. of water at a time until it reaches desired consistency.

Cover and chill for at least 2 hours to allow flavours to blend together.
