Lemon Coconut Energy Balls

With a tangy lemon flavor and nutty coconut, these lemon bliss balls are a delicious way to boost your energy for whatever is on your agenda!

Ingredients:

– Unsalted almonds – Unsalted cashews – Pitted dates – Shredded coconut

Boil some water and soak dates in the hot water for approximately 5 minutes to soften.

Add almonds and cashews to a food processor. Pulse until nuts are finely chopped (but not a paste).

Add dates, coconut, lemon zest, lemon juice and salt. Pulse until dates are finely chopped and the mixture starts to clump together.

Shape the mixture into 1 1/2 inch balls and roll in coconut flakes.

Seal in container and store in the fridge or freezer.
