Leftover Thanksgiving Turkey Soup with Rice

This leftover Thanksgiving turkey soup with rice is a creamy, comfort food recipe perfect for using up those Thanksgiving dinner turkey leftovers!

Ingredients:

– Olive oil – Onion – Garlic – Mushrooms – Carrots

Heat olive oil over medium heat in a large soup pot or dutch oven. Saute onion, garlic, mushrooms, carrots, and celery, until the onion is tender and caramelized.

Add broth, rice mix, and poultry seasoning. Bring the ingredients to a boil, reduce the heat, and simmer for 30 minutes or until the rice is tender.

Stir in the cooked turkey and evaporated milk, and cook for an additional 5 minutes.

Season with salt and black pepper, to taste. Garnish with parsley and parmesan cheese.
