Using a large bowl, mix together the oat flour, protein powder, baking powder, cinnamon, and salt.

Store protein pancake mix in a large airtight container until ready to use.

How to Make Protein Pancakes

In a blender, blend together 1 cup of the protein pancake mix, with the eggs, egg whites, banana, coconut oil and vanilla extract, until smooth.

Preheat a large griddle or nonstick pan to medium-high. Grease the skillet with cooking spray or coconut oil. Place 2 heaping tablespoons of batter into the skillet.

Cook for 2-3 minutes, or until the pancake starts to bubble and the edges begin to harden. Flip the pancake and cook for 1-2 minutes more.
