Fold in cottage cheese and mix with a spatula until combined, then combine with your hands until a ball of dough forms. Knead it about 20 times or until the dough comes together.
Form a long log and cut into 8 even pieces. Take one piece of dough and roll it into the shape of a rope, then form into a circle, pinching the ends together to form a bagel shape.
Place on a baking sheet lined with parchment paper and repeat with remaining dough. Brush the bagels with the egg wash and sprinkle them with your favorite toppings.
