Healthy Protein Chickpea Cookie Dough Balls {No Bake}

These healthy chickpea cookie dough balls are a delicious no bake snack to have on hand and are so simple to make!

Ingredients:

– Chickpeas – Peanut Butter – Maple Syrup – Vanilla Extract – Cinnamon

Process Chickpeas

Place the chickpeas into the food processor and process until broken down.

Add the remaining ingredients other than the chocolate chips and blend until a smooth cookie dough-like consistency is formed.

Blend Until Smooth

Mix in the mini chocolate chips using your hands or a large spoon.

Add Chocolate Chips

Using your hands, roll the mixture into approximately 16 1-inch balls.

Roll

Serve immediately or store in the fridge or freezer for later.
