Healthy Make Ahead Breakfast Burritos

These healthy breakfast burritos make for a delicious meal that can be fully prepped ahead of time and stored in the freezer for the easiest grab and go breakfast ever!


– Red pepper – Back bacon – Eggs – Milk – Salt

Over medium high heat, heat one teaspoon of the oil. Cook the red pepper until fragrant, about 5 minutes.

Add the diced bacon and cook for an additional 3-4 minutes, stirring frequently. Set mixture aside in a bowl or on a plate.

In a medium bowl, whisk together the eggs, milk, salt and pepper.

In the same pan, heat the remaining teaspoon of oil over medium high heat. Add the egg mixture to the pan and cook until mostly set, stirring frequently, about 5-6 minutes.

Remove the pan from the stove. Add the red pepper mixture and green onions to the pan with the eggs and mix to combine. Allow the mixture to cool to room temperature.
