Healthy Dill Potato Salad Recipe {No Eggs}

This homemade healthy dill potato salad recipe is perfect for BBQ season and is a guaranteed crowd pleaser.

For The Potato Salad – Baby potatoes – Apple cider vinegar – Red onion – Celery – Dill

How to Cook Potatoes

Place potatoes in a large saucepan and cover with 1 1/2 inches of water. Season water with salt.

Bring the water to a boil, and then reduce to a gentle simmer. Cook the potatoes for 15 to 20 minutes or until easily pierced with a fork.

Meanwhile, add cold water to a medium bowl filled with ice. Drain potatoes and then place them in the ice water.

Add the onions to a small bowl and cover with cold water. Soak for 10 minutes, then rinse.

Prepare Greek Yogurt Dressing

Combine the Greek yogurt, mayonnaise, mustard and honey in a small bowl until smooth and creamy.
